4 Gala apples (cored and quartered)
5 cups of water
5 pitted medjool dates
3 cinnamon sticks
1 tsp whole cloves
1/2 tsp whole allspice
Place your quartered apples into a big pot. Add in cinnamon sticks, whole cloves, allspice and water. Bring to a boil and then simmer over low-medium heat for about 2-3 hours. Take out the apples and mash them. Add them back in with the dates and cook for an additional 1-2 hours or so.
Strain liquid and store in an airtight container for up to 1 week.
