Ingredients:
1 full can of coconut milk
2 softened pitted dates
1 tsp matcha powder
2 tsp water
1/2 cup unsweetened shredded coconut
Method:
To prepare the matcha, mix the powder with 2 tsp of hot water and whisk well.
In a small pot bring the coconut milk with the dates to a boil. Simmer over low-medium heat until dates are dissolved. Then add the rest of the ingredients including the matcha mixture and stir well. Fill in popsicle molds and put in freezer for about 30 minute before adding the wooden popsicle sticks. Freeze them for another 2 hours before serving.
