Homemade Lemon Ice Tea

Growing up lemon ice tea was one of my favorite drinks. As kids we were hardly ever allowed to drink sugary drinks, but once in a blue moon our parents would let us have some.

I’ll admit if I were to try some of that same ice tea now I would probably not like it anymore. Since I started this sugar free journey,  I’ve had a lot of fun re-inventing those snacks and treats I used to be so fond of, and this one I think is a total winner.  I’m just relieved that I was able to snap some shots before my husband completely chugged everything down!

How to prepare ice tea?

I have tried to steep the iced tea both hot and cold, but I must say I prefer the hot steeping method much more. First of all, it’s way quicker steeping the tea hot and letting it cool off as opposed to letting it cold steep in the fridge for several hours. Second, I think the flavor of the tea comes through a lot stronger in a totally good way! If you decide to steep using hot water you need to be careful. There is always the risk of steeping the tea too long and making it bitter. To avoid that I would recommend steeping the tea for no longer than 3 to 5 minutes. After that you will have to dispose of the tea bags and allow the tea to cool off in the refrigerator.

If you are used to a sweet version of ice tea I would recommend sweetening the tea naturally. Personally, I like to use medjool dates as a sweetener but to save time you can always use a little bit of either honey or maple syrup (vegan). Homemade Lemon Ice Tea

Total Time: 2 hours 10 minutes

You won't believe how tasty this homemade lemon ice tea is. Given that it's free of any sugars or refined ingredients, it's perfect for getting you through these hot summer days. 

Ingredients

  • 8 cups water
  • 8 bags earl grey tea
  • 1/2 lemon juice
  • 4-5 medjool dates (pitted)

Instructions

1. Place tea bags in a large measuring cup or glass bowl.

2. Bring 8 cups of water to a boil. Add dates and cook over medium-high for about 5 minutes. Pour water (including dates) into the measuering cup and let steep for about 3-5 minutes. Take out tea bags, add lemon juice and stir. Transfer tea into an airtight container and let cool for a few hours.

3. Enjoy tea in a glass filled with ice. Top of with fresh mint.

4. Store ice tea in the refrigerator for up to two weeks.

Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
