Coffee is my indulgence. I try not to eat a lot of sweet things or dessert myself but one goodie I grant myself almost every day is a delicious cold brew Latte. It is not necessarily sweet but, after being sugar-free for so long certain foods such as unsweetened chocolate and cold brew mixed with oat milk (the best) are a total treat 🙂
After enjoying so many cold brews lately I felt like I had to test out more recipes leveraging that tasty coffee flavor, so I thought, why not try to sweeten the summer with an amazingly creamy paleo coffee ice cream made from scratch? It turns out this decision paid off in the end! What better way is there to enjoy a warm summer day than with some healthy ice cream.
For this flavor I used the same paleo ice cream base just like the Blueberry Ice Cream. It requires egg yolks and a lot of whisking. As a sweetener, I love to use medjool dates. They are thick and juicy and work perfect in ice cream. You’ll need to dissolve the dates by heating them in the coconut milk first, but sometimes it’s faster to just blend the dates into the coconut milk beforehand. Fun fact, the dates actually don’t freeze in the freezer so they make the ice cream even creamier. I call it a Win Win. (Just don’t forget to take all the date pits out!)
What do you need for making the perfect coffee paleo ice cream
- ice cream maker. I have a kitchen aid so I just ordered the attachment for preparing ice cream.
- full-fat coconut milk or coconut cream
- your favorite coffee beans (ground)
- and don’t forget to use medjool dates. They are essential when trying to cut the sugar in your recipes.

Paleo Coffee Ice Cream
The creamiest most delicious paleo coffee ice cream ever made. It requires only 4 ingredients and is dairy-free, paleo and refined sugar-free. Add it to your list of homemade healthy ice cream recipes.
Ingredients
- 2 cans of full-fat coconut milk
- 1/4 cup ground coffee
- 6-8 softened medjool dates
- 4 egg yolks
Instructions
In a small bowl pour hot water over medjool dates and let sit for about 10-15 minutes.
In a separate bowl whisk four egg yolks by hand until foamy and set aside.
Squeeze any excess liquid from dates and add them into a medium pot with the coconut milk and ground coffee. Simmer over low heat until dates are dissolved. Take off heat and add 1/4 of the liquid into the egg yolks whisking constantly.
Pour the egg yolk coconut milk mixture back into the pot and cook over low-medium heat whisking constantly for about 5 minutes to a creamy consistency. Do not overcook.
Strain through a sieve and cool down in refrigerator. Once cooled down pour the custard into your ice cream machine and churn according to the instructions of your machine. It took 20-30 minutes in my kitchen aid attachment to become a delicious creamy ice cream. Store in freezer and take out 20-30 minutes before serving.
