Pure Cafe Pumpkin Spice Latte

After a beautiful, long hiking weekend in Telluride, Colorado I was very excited to come home and relax before the new week starts.  I decided to make myself a tasty Pure Cafe Pumpkin Spice Latte. Takes less than 5 minutes to prepare and makes for a deliciously healthy fall inspired beverage.

Come fall, you will rarely find a coffee shop that doesn’t offer its seasonal pumpkin spice latte. Almost everyone loves it and starts to crave it as the days get colder. I certainly can’t go through the fall without enjoying a few mugs of that delicious goodness.

That being said most coffee shops and restaurants use artificial flavors and/or sugary syrups.  Always striving to live my healthiest life possible, I like to make my own version of the classic pumpkin spice latte with real and whole ingredients.

In the spirit of the season, and true to their name,  Pure hooked me up with their limited edition pure cafe pumpkin spice.  Being sweetened with stevia and packed with antioxidants, vitamins, and only whole ingredients you can pronounce, this supplement is the perfect alternative to an overly sweet drink that leaves you feeling like you’ve just sinned. Mix it in with your favorite plant based milk and pumpkin spices and you got yourself a winner.

Pure Pumpkin Spice Latte

Pure Pumpkin Spice Latte

Yield: 2
Cook Time: 5 minutes
Total Time: 5 minutes

This tasty pure cafe pumpkin spice latte takes less than 5 minutes to prepare and makes for a deliciously healthy fall inspired beverage.

Ingredients

  • 2 packets of pure cafe pumpkin spice
  • 12 oz. plant based milk (cashew, oat)
  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin spice
  • 1 cup coconut cream (whipped)*

Instructions

  1. In a saucepan or medium sized pot add plant based milk, cinnamon and pumpkin spice. Bring to a simmer and mix well.
  2. Take off the heat and mix in the pure cafe pumpkin spice. Stir well, pour into two mugs and top off with whipped coconut cream. Serve immediately.

Notes

*Whip coconut cream by mixing with a handmixer or kitchen aid until coconut cream appears thicker.
