Ok, lets be real, these little guys are more cute than scary, but who cares, they’re a blast to make. I can’t stop laughing when I look at these, they’re so funny, and I promise your kids will get a kick out of them too!
Being from Austria, I didn’t really grow up celebrating Halloween. The one time I did go out as a kid, I didn’t get any treats because nobody prepares for the holiday :(. Imagine my excitement moving to the US! While I must admit, I’m not a huge fan of all the sugary junk, I do love seeing all the scary and clever costumes ppl come up with, and I love creating spooky halloween treats. Fittingly this year I played with pumpkin and peanut butter and created these flourless baked muffins.
Like I said before, they are gluten-free, dairy-free and refined sugar-free. Sounds like a let down? No, still freaking delicious and sweet enough for all you dessert lovers out there.
You’ll most like have all the ingredients in your pantry. Plus it will take you less than 5 minutes to throw em in the oven. Give them 15-20 minutes to bake, 5 minutes to garnish et voila you got yourself a halloween treat. Perfect to bring to a family gathering or party.

Flourless Franken Muffins
Trick or treat? These scrumptious spooky Franken-muffins are flourless, refined sugar-free, and packed with peanut butter and pumpkin. A delightful alternative to the classic overly sweet and unhealthy halloween treats.
Ingredients
- 3/4 cup peanut butter (creamy, no salt, no oil)
- 1 cup pumpkin puree
- 2 eggs (substitute with flax or chia eggs)
- 1/2 tsp baking soda
- 1/2 tsp apple cider vinegar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup maple syrup
- 1/4 tsp salt

Instructions
1. Preheat oven to 350 degrees Fahrenheit and grease muffin tin with coconut oil or line with paper cups.
2. In a medium sized bowl add all ingredients and mix until well combined.
3. Transfer dough into your muffin molds/cups (fill up to 4/5 of each mold) and bake in the oven for about 20 minutes.
4. Take out of the oven and transfer onto a cooling rack. Decorate with candy eyeballs and chocolate if preferred.
