Just in time for the upcoming holidays, I’ve come up with this healthy but yummy mini cinnamon donut recipe. These delicious baked mini rings are gluten-free, dairy-free and refined sugar-free. Perfect to enjoy on a cold winter day without having to stay in line at the coffee shop.
Donut be fooled by the looks of these delicious baked mini cinnamon donuts. Unlike the usual sugary fried donuts, these are baked with whole ingredients that will taste like the original thing, and produce way less guilt as you satisfy that craving. No need to hold back, grab a few to enjoy with your coffee or just as a snack.
Being from Austria, I don’t have much experience when it comes to the classic american fried donut. One of the first times I visited my husband (then boyfriend), he introduced me to these delicious little donut holes called munchkins…I used to LOVE THEM!
Of course, this was all before I changed diet…although I don’t blame you if you enjoy them once in a while XD.
What I’m offering here, is something perfect for when you’re craving a delicious donut but want to look for something wholesome that saves you some calories. These cute little cinnamon donuts are totally the solution for when you find yourself conflicted at a donut craving crossroad.
Fluffy and moist on the inside with a delicious cinnamon sugar coating, they can be enjoyed vegan and keto as well! One word of warning though if you are not a fan of monk fruit sweetener, you can either skip that step or use coconut sugar/cane sugar.
The recipe itself is pretty simple. You just need to combine all the ingredients and bake the donuts in the oven. What some of you might need is a donut pan. It’s the same concept as a muffin pan. It creates the perfect looking donut. And who doesn’t love a pretty perfect looking donut. Cinnamon Mini Donuts
Just in time for the upcoming holidays, I've come up with this healthy but yummy mini cinnamon donut recipe. These delicious baked mini rings are gluten-free, dairy-free and refined sugar-free.
Ingredients
- 1 egg (for vegan, substitute with one flax egg)
- 3/4 cup gluten free flour blend (Bob's Red Mill)
- 1/4 cup almond pulp (substitute with almond flour)
- ¼ cup coconut sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 tsp ground cinnamon
- ½ cup plant based milk
- 2 tbsp coconut oil (melted)
- ¼ tsp salt
Cinnamon Coating
- 1/2 tsp cinnamon
- 1/2 cup monk fruit sweetener (or coconut sugar, cane sugar)
- coconut oil spray
Instructions
Preheat oven to 375 degrees Fahrenheit and grease mini donut pan with coconut oil.
In a medium sized bowl mix together coconut sugar, flour, baking powder, baking soda, cinnamon and salt. In a separate bowl combine coconut oil, egg, almond pulp and milk.
Add wet ingredients into the dry ingredients and mix until just combined. Transfer into a ziploc or piping bag and pipe dough into each donut mold (3/4th of the mold). Bake in the oven for about 10-12 minutes.
Remove from oven and let donuts sit in the pan for a few minutes.
In a ziploc bag add monk fruit sweetener/granulated sugar and cinnamon.
Spray each mini donut with coconut oil spray and transfer into the ziploc bag. Shake until donut is fully coated.
Store leftovers in an airtight container up to 3 days.
