Healthy Chocolate Pretzel Bark

I love movie nights, I mean, what’s better than cuddling up in bed or on the sofa, dimming the lights and relaxing with a fun movie?  I don’t know, not much, but I will tell you what can make that experience even better: a delicious snack. This healthy chocolate pretzel bark will bring your movie night to the next level! It only takes 5 minutes to prep and tastes delicious. The best part, as always, it is gluten-free, dairy-free and refined sugar-free. The perfect sweet and salty combination for a tasty but healthy movie snack.

Growing up, one of my favorite movies was Marry Poppins. My two sisters and I spent countless nights watching this movie while munching on pretzels and popcorn. We were never allowed to have chocolate late at night which is understandable considering the sugar content, so I decided to transform our favorite snacks into a fun, healthy treat.

Everything tastes better with chocolate, especially when there’s some Lily’s sugar free chocolate involved. It is so delicious; you wouldn’t believe it is only stevia sweetened. One of my favorites is their vegan salted dark chocolate which I used for this recipe as well. The fact that it is sugar-free makes me feel a lot better when I end up eating half the bar 😛

To tell you the truth, making your own chocolate bark has lots of advantages:
  • You get to choose your own chocolate. You can either go the regular route or try the paleo/stevia sweetened/unsweetened alternatives.
  •  You can top it off with whatever you want – nuts, dried fruit, small candies, or whatever your imagination allows. To make it movie themed I used pretzels, peanut butter cups and popcorn, but really the possibilities are endless.
  • Most importantly it is much cheaper to make your own bark from scratch than buying an overpriced version at the store.  I promise it will taste better too!

I can assure you, this won’t be the last chocolate bark recipe I’m sharing this year. 🙂 I’m already thinking about a beautiful Christmas peppermint version.

Pretzel Chocolate Bark

Pretzel Chocolate Bark

Yield: 12 oz
Prep Time: 5 minutes
Additional Time: 10 minutes
Total Time: 15 minutes

This healthy chocolate pretzel bark will bring your movie night to the next level! It only takes 5 minutes to prep and tastes delicious. The best part, as always, it is gluten-free, dairy-free and refined sugar-free.

Ingredients

  • 12 oz unsweetened/stevia sweetened chocolate (I used Lilys vegan salted dark chocolate)
  • 1/2 cup gluten-free pretzels ( I used Snyder's gluten-free Mini Pretzels)
  • 5-10 peanut butter cups (optional, I used lily sweets stevia sweetened peanut butter cups)
  • 1/4 cup salted popcorn (optional)
  • 1/4 cup pomegranate seeds (optional)
  • Pinch of sea salt

Instructions

  1. Heat chocolate over low heat until its fully melted. Add a pinch of salt and pour onto a lined baking sheet.
  2. Top off with chopped peanut butter cups, gluten-free pretzels, homemade popcorn and pomegranate seeds.
  3. Let sit at room temperature for about an hour or to speed up the process, let bark cool in the fridge for about 10 minutes.
  4. Break chocolate into several pieces. Enjoy as a snack when watching a movie. Store leftovers in an airtight container.
