Kettle corn chocolate fudge, my newest dessert creation that will knock your socks off. It’s one of those classic desserts with a twist. Perfect for a delicious holiday treat, or really for any occasion (like the weekend :P). As always, these fudgy chocolate bars are dairy-free and refined sugar-free.

I hope you are as excited as I am for the upcoming holidays. As a recipe developer I usually plan months ahead so right now I’m in full swing holiday dessert mode. When I’m not shooting, I’m constantly in the kitchen experimenting with new tastes and recipes. Sounds like a lot of work, but I love it! I’m a little bit of a mad scientist in the kitchen, and that’s a good thing. I’m guessing it wouldn’t be too great being a full time food photographer/influencer if I didn’t love cooking 😛
Back to the important topic at hand: food. So, the other day I made my first healthy version of kettle corn. Maple, cinnamon and popcorn. It was absolutely delicious and the perfect combo if you ask me. Anyways, I prepared quite a lot for that particular shoot, and since I don’t usually eat too much without a good reason (e.g. dinner party, family get together etc.) I had at least 5 cups worth of kettle corn left over in my kitchen! No worries though, because that’s when I started to get an idea.

After going to my metaphorical drawing board, I thought that the kettle corn would make for a killer topping on these mouthwatering chocolate fudge squares. As it turns out, my experiment paid off, because chocolate and kettle corn go hand in hand like peanut butter in jelly. Well, I could be biased here, because if you ask me, I’ll combine chocolate with almost anything 😛
When I think of the word indulgence I think of rich decadent chocolate fudge. There is nothing better than biting into that smooth dark chocolate goodness. Add some delicious maple cinnamon kettle corn and you’ve just taken thing to the next level. Absolutely delicious!

The good thing about these fudgy treats, no need to bake them. In this recipe you just need to combine all the ingredients into a fudge mixture and then let it set in the fridge. Can’t get any faster, really. Plus for all my health conscientious friends out there, there is no refined sugar or dairy involved.
