How to prepare this simple but absolutely delicious vegan+ paleo chocolate fudge
- First off, you will need a square/rectangle pan for refrigerating the fudge. I used my loaf pan which works best for these measurements. If you only have a brownie pan at home, be sure to double the measurements.
- In my paleo+vegan fudge I like to incorporate some coconut oil in order to make it solid, but still creamy enough to be called fudge 😛
- Coconut milk is one of the best plant-based milks to use. It is very thick and rich, plus it’s packed with healthy fats. If you don’t like coconut milk I suggest using homemade or store-bought cashew milk. It has a neutral taste and is a fantastic cream alternative. I make my own homemade milk using Almond Cow.
- The most important ingredient is chocolate of course. Personally, I like to use stevia sweetened/paleo sweetened chocolate. You can always use unsweetened chocolate and add more of the maple syrup instead. This shouldn’t throw off the consistency too much. Make sure to sweeten it to your liking.
- Last but not least – nut butter. It makes the fudge creamy and rich plus it add healthy fats. I prefer using Trader Joe’s mixed nut butter just because its my all-time favorite (love to eat a spoonful a day :P) and it works really well in this recipe. You can add almond butter or cashew butter as well. I wouldn’t recommend using peanut butter since the peanut flavor is very strong and it could overpower the fudge. However If you are a peanut butter freak I’m sure you’d enjoy chocolate peanut butter fudge as well!
If you love the taste of tahini you should try this delicious paleo chocolate tahini fudge.
