With only 4 main ingredients, and less than 10 minutes of prep time, these stunners are the perfect treat for a romantic weekend with your special someone.
I’ve been craving this chocolate raspberry combo a lot lately, and I’ve even bought myself a few different versions to try out from other companies. I experimented around a bit, and finally found a recipe for my own dark chocolate & raspberry truffles just in time for the season of love. I’m beyond excited to share this recipe with you, and think you will be very impressed with the results. As always, they’re super easy to make and require only 4 ingredients. They’re vegan, paleo, and of course made from scratch.
To prepare these little stunners you just need unsweetened or stevia sweetened chocolate, coconut milk, coconut oil and the key ingredient: freeze dried raspberries.
I wasn’t sure whether to include fresh/frozen raspberries or freeze dried. I am so glad I choose the latter. I’ve used trader joes freeze dries berries before and they’re super easy to incorporate into desserts. Just process them into a powder et voila you can infuse anything with that decadent fruity flavor.
I would also point out, that pink powder makes for a beautiful garnish. These little truffles work so well in a valentines day box, I mean don’t they just scream love to you…or maybe I’m just obsessed with chocolate ¯\_(ツ)_/¯

Dark Chocolate & Raspberry Truffles
With only 4 main ingredients, and less than 10 minutes of prep time these deliciously healthy dark chocolate and raspberry truffles are the perfect treat for a romantic weekend with your special someone.
Ingredients
- 1 can full-fat coconut milk (unsweetened)
- 10 oz unsweetened/stevia sweetened/paleo chocolate
- 2 tbsp coconut oil
- 3 tbsp freeze dried raspberries (powdered)
- 1/4 cup maple syrup (optional)
Chocolate Coating
- 5 oz unsweetened/stevia sweetened/paleo chocolate
- 2 tbsp coconut oil
Instructions
1. In a small sauce pan heat coconut milk, coconut oil and freeze dried raspberries. Simmer for about 5 minutes over low heat.
2. Add chocolate and keep over low heat. Stir occasionally until chocolate has fully melted and everything is combined.* Add sweetener (maple syrup) if needed.
3. Transfer into a bowl and refrigerate for about 1-2 hours or overnight.
Take 1 tbsp of the chocolate mixture at a time and form into little truffle balls with the palms of your hands. Repeat until all of the mixture is gone. Freeze for about 30 minutes.
4. In the meantime prepare chocolate glaze by melting chocolate and coconut oil over low heat.
5. Coat one truffle at a time in chocolate and transfer onto parchment paper.
6. Let dry and transfer into an airtight container. Store in the refrigerator for up to one week.
