I can’t believe Christmas is only a few days from now. It’s also the last weekend to prepare all the delicious Christmas cookies and desserts we like to enjoy during the holidays. While this years celebration will be a lot smaller I still love to prepare as many cookies as possible :P. I pack them up in little bags and gift them to friends and family. They make for the perfect edible Christmas gift. Definitely a lot of work, but totally worth it; I just love spreading that Christmas cheer!
I am all about this time of year because I get to make people happy with delicious treats. Last year I’ve created a Christmas cookie box dedicated to my Grandma, featuring my favorite cookies growing up, with a healthy twist. This year I created a new box with some similar recipes and new recipes. They are seriously the best, and people absolutely love them. Despite being all dairy-free, gluten-free, and refined sugar-free, they are absolutely delicious and definitely worth the baking time in the kitchen.
The coolest thing about these, I used one cookie dough, one chocolate mousse, and one meringue cookie recipe to create all of these different varieties. It helps save a ton of time and makes everything so much easier. Trust me, people won’t accuse you of being lazy, because each cookie still has its unique taste. With one day of baking in the kitchen you can whip up 8 different amazing cookie batches and your family will love you for it 😛

1.) Dairy-free Tahini Caramel Linzer Cookies
These linzer cookies are deliciously nutty, naturally sweetened and super easy to make. The homemade cranberry jam makes these cookies soft and tart in a really good way. I put out an assortment of cookies for friends we had over this past weekend, and these were one of the first varieties to disappear.

These deliciously cute gingerbread cookies are a must for the holiday season. The recipe is super easy, can be prepared ahead of time, and is perfect for creative decorating. Unlike traditional gingerbread cookies these guys are free of gluten, dairy, and refined sugar.

These deliciously gluten-free speculoos cookies are a must-bake this holiday season. They are deliciously crunchy, packed with all the winter spices and a lot healthier than the classic. Also the perfect edible gift for friends and family.

These pretty little things are a must in your cookie box. They are just too beautiful to pass on, and they’re sweetened with maple instead of cane sugar. The same meringue base is used in the coconut maroon cookies.

These cute little chocolate boots require the same recipes as the almond flour stars (above) with a little twist. I added one tablespoon of cacao powder to the dry ingredients to make them more chocolatey. Plus dipped them in dark chocolate and sprinkled with crushed peppermint candy cane.
