Once summer hits, watermelon is hands down my favorite fruit. My husband and I go through 2-3 whole watermelon a week. 😛 Who can blame us? It’s super refreshing, lightly sweet and one of the most hydrating foods you can eat. While I love eating it daily, I like to get creative and decided to prepare a deliciously fruity watermelon salad.
It’s got tons of watermelon, raspberries, cucumbers, some lemon juice, a little bit of honey and lots of fresh mint. Who can say no to that? The perfect bowl to bring to a family gathering or party. Plus, it’s probably one of the fastest recipes there is.
Here is how:
Cut watermelon into cubes and transfer into a large bowl.
Add organic raspberries, freshly chopped mint, organic cucumber, honey, lemon juice and combine well.
Serve immediately and store leftovers in an airtight container in the refrigerator. ENJOY!

Ingredients
- 4 cups watermelon, cubed
- 1/2 cup organic cucumber, diced
- 1/2 cup organic raspberries
- 1/4 cup organic fresh mint, chopped
- 2-3 tbsp organic honey
- organic lemon juice, 1/2 lemon
Instructions
