2. Blend Away: Toss the pitted dates with almond butter into a food processor and blend until you get a smooth, sticky paste. You might need to scrape down the sides a couple of times.
3. Flavor Time: Add the vanilla bean and a pinch of sea salt to the date paste. Blend again until everything’s well combined.
4. Chill Out: transfer mixture into a lined loaf pan and set in the freezer for about 3-4 hours.

Date Caramels

Ingredients
- 15 medjool dates
- 1/3 cup almond butter
- 3 tbsp coconut oil
- 1/2 tsp vanilla beans, bourbon
- 1/4 tsp sea salt
- 12 oz chocolate chips
Instructions
- In a bowl add pitted medjool dates and add boiling water. Soak for about 10 minutes.
- Squeeze out any excess liquid and transfer into a food processor.
- Add other ingredients and process until completely smooth.
- Spread evenly into a lined loaf pan and freeze for about 3-4 hours.
- Melt chocolate over low heat. Cut caramels into squares and dip in melted chocolate. Sprinkle with sea salt and enjoy.
