These Superberry Cacao Truffles are a rich, nourishing treat made with cacao wafers and packed with crunchy seeds, goldenberries, and puffed millet for the perfect bite. Naturally gluten-free, dairy-free, and refined sugar-free, they’re loaded with antioxidants, healthy fats, and plant-based protein.
Ingredients
- 220grams of cacao wafers/chocolate chips, dairy-free
- ⅓ cup golden berries, sub with raisins
- ¼ cup unsweetened coconut flakes
- ¼ cup pumpkin seeds
- ¼ cup buckwheat groats
- 2 tbsp chia seeds
- ⅓ cup sunflower butter (or substitute with your preferred nut butter)
- Puffed millet, for garnish
Instructions
1. Melt the chocolate: Place the cacao wafers in a heatproof bowl set over a saucepan of gently simmering water (double boiler method). Stir until smooth and fully melted.
2. Incorporate the nut butter: Transfer the melted chocolate to a mixing bowl. Add the sunflower butter and whisk until well combined and glossy.
3. Fold in the superfoods: Add the coconut flakes, goldenberries, pumpkin seeds, buckwheat groats, and chia seeds. Stir until evenly coated.
4. Shape the truffles: Spoon the mixture into silicone truffle molds or small paper cups. Sprinkle with puffed millet and any additional superfood toppings you like.
5. Chill and set: Place in the refrigerator for 1–2 hours, or until firm.
6. Serve: Once hardened, remove from the molds and enjoy immediately. Store any leftovers in an airtight container in the refrigerator.
