Did someone say Sweet Potato Brownies?!

Sweet Potato Brownies

Yup they are made out of sweet potatoes. Whenever I make them I get the same question, and yes I have asked that myself , do they taste like actual sweet potato? That is a big NO. I do love the taste of sweet potatoes but these brownies taste like actual brownies. They are mouthwatering and super fudgy.

Before I started clean cooking I used to make delicious brownies that were loved by everyone. I was so sad when I couldn't make them anymore until this amazing recipe. These little suckers are glutenfree, dairy free and contain no sugar, not even natural sweeteners. Believe it or not, the dates and sweet potatoes are sweet enough to make these brownies taste like heaven.

Ingredients:
350 g cooked sweet potatoes
130 g softened pitted dates
100 g roasted almonds (possible to substitute walnuts, hazelnuts etc.)
50 g Brown Rice flour (possible to substitute with any other gluten free flour)
20g almond meal
2 eggs or 4 Chia eggs (4 tbsp chia seeds, 4 tbsp almond milk @malkorganics )
4 tbsp cacao powder
1 tsp baking powder
Optional: 1 tbsp maple syrup
Unsweetened chocolate for drizzle

Method:
Peel sweet potatoes and cut into small cubes. Cook in a small pot over high heat for about 10-15 minutes until sweet potatoes are soft. Let cool and soak dates in hot water for about 15 minutes.

While Dates are soaking place almonds (or other nuts) on a rack in the oven at 180C/356F and let roast for 5-10 minutes. Drain dates and mix with all other ingredients in food processor until fully combined. Spread the brownie mixture in square brownie baking pan onto parchment paper and bake for about 35 minutes at 356F/180C on the middle rack.

Cut into squares and drizzle brownies with chocolate if preferred. Serve brownies while still warm.

This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.

Recipe: 
Hazelnut Milk
1 cup roasted hazelnuts
Water, filled to the minimum line of the Almond Cow

Truffles
160 ml freshly made hazelnut milk
1shot espresso (or strong brewed coffee)
½ cup finely ground hazelnuts
1 cup dairy-free chocolate chips
1 tbsp coconut oil

Coating
1 cup dairy-free chocolate chips
Chopped hazelnuts (optional)

Instructions
Make the hazelnut milk: Process hazelnuts and water in the Almond Cow. Measure 160 ml milk for the recipe; refrigerate the rest for later use.

Prepare filling: Heat hazelnut milk and espresso until hot (not boiling). Pour over chocolate chips and coconut oil; let sit 2-3minutes, then stir until smooth. Fold in ground hazelnuts. Chill until firm, up to 3 hours.

Shape & coat: Roll into truffles and freeze for 2 hours. Melt remaining chocolate, dip truffles, and garnish if desired. Let set before serving or storing. Enjoy!
