Ingredients:
2 onions
fresh thyme
2 cups peas (fresh or frozen)
4 cups potatoes (peeled and diced)
500ml chicken stock (or water)
1 bay leaf
100ml white wine
salt, pepper to taste
Method:
In a big pot add onions and potatoes with a little bit of oil. Sautee over high heat until onions are translucent.
Deglaze with wine and stir well. Add chicken stock, bay leaf and fresh thyme and simmer over low heat for about 40 minutes until potatoes are cooked through and tender. Add peas and simmer for another 5 minutes. Don’t let the soup simmer too long
Transfer liquid into a food processor or high speed blender and mix until smooth. Add salt and pepper to taste and enjoy while still warm. Store in fridge for up to two days.
