Today I have for you a variety of my all-time favorite Christmas cookies to prepare for this years holidays. From paleo chocolate rum truffles to healthy gingerbread cookies and maple cacao meringues, everyone will find their favorite holiday cookie in this box. As always, all recipes are gluten-free, dairy-free, and refined sugar-free.
Christmas is just around the corner and I already feel the stress getting to me. I know, I know, it should be a time to relax and enjoy family and friends, but I can’t help it. I just can’t stop myself from preparing dozens of Christmas cookie boxes for all my family and friends, and all 3 days before we leave to visit my in-laws! It’s definitely a lot of work, but totally worth it; I just love spreading that Christmas cheer!
I am all about this time of year because I get to make people happy with delicious treats. I lovingly refer to these as grandma’s Austrian Christmas cookies, because she is the one who would always make them every year for me and my sisters. They are seriously the best, and people absolutely love them. This year I decided to re-create some of my favorite cookie recipes from my grandma with a healthy twist. Despite being all dairy-free, gluten-free, and refined sugar-free, they still taste very similar to my grandmas. I was really worried about that aspect of reworking the recipes, but I couldn’t be more happy with the results.
The coolest thing about these, I literally used one cookie dough (except for the gingerbread dough), one chocolate mousse, and one meringue cookie recipe to create all of these different varieties. It helps save a ton of time and makes everything so much easier. Trust me, people won’t accuse you of being lazy, because each cookie still has its unique taste. With one day of baking in the kitchen you can whip up 7 different amazing cookie batches and your family will love you for it 😛

7 healthy Christmas cookies
1.) Maple sweetened Cacao Meringues
These pretty little things are a must in your cookie box. They are just too beautiful to pass on, and they’re sweetened with maple instead of cane sugar. The same meringue base is used in the coconut maroon cookies.
2.) Austrian Linzer Cookies
These linzer cookies are deliciously nutty, naturally sweetened and super easy to make. The homemade cranberry jam makes these cookies soft and tart in a really good way. I put out an assortment of cookies for friends we had over this past weekend, and these were one of the first varieties to disappear.
3.) Gingerbread Cookies
These gingerbread stars are one of my favorite Christmas cookie recipes. Soft in the center, crisp on the outside and packed with the classic gingerbread flavors. Plus they are super healthy and easy to make.
4.) Coconut Macaroon Cookies
Coconut Macaroon Cookies as you have never seen them before. These traditional Austrian cookies are one of a kind. They are crisp on the outside, chewy and soft in the center and taste like heaven in your mouth. These are my husbands absolute favorite. He will eat as many of these as I’m able to make.
5.) Chocolate Pecan Cookies
These crunchy chocolate pecan Christmas cookies just look so cute! The roasted pecans in the cookies and the pecan praline on top mixed with chocolate will leave you wanting more. They are so easy to prepare and make for the perfect nutty Christmas cookie.
6.) Austrian Vanilla Crescent Cookies
These lovely crescent moon Christmas cookies will greet you with a delicious crisp hazelnut flavor and take less than 30 minutes to prepare. A healthy take on the traditional Austrian vanilla crescent cookies. Pretty on a platter and perfect to bring to any holiday party. They will be a big hit for sure.
7.) Chocolate & Rum Truffles
These rich and decadent chocolate rum truffles are seriously creamy and irresistible. The filling requires only four ingredients and 5 minutes to prepare. Perfect for an easy but amazingly delicious paleo holiday treat.

This Christmas box looks so lovely! I could not resist by making one myself and I was very curious about the gluten free recipes! I made the pecan, the crescent and the cranberry biscuits to be part of my cookies box and I loved them ! They are very healthy and delicious! Your last post about Caramel Linzer cookies are definitely on my to do list!
