The best part about my day is definitely breakfast 😛 Before I go to bed, I’m already looking forward to a delicious breakfast bowl the next morning. Whether it be chia pudding, coconut yogurt with granola, porridge, smoothie or overnight oats, it just feels so good to start the day off right with nourishing foods. It’s become the most important meal of my day as it really helps me get into a good mindset for the rest of the day. Even though I absolutely love savory cooking and I share all kind of dessert recipes, I will always cherish my morning breakfast. If you can relate, you will love this recipe.
More than just Overnight Oats
For this particular breakfast recipe I wanted to be a little more creative. These overnight oats are not like any other. With these, you’ll get to enjoy an extra hit of energy in the form of some java goodness. By adding homemade cold brew to the oats you get coffee and breakfast in one convenient package. Perfect for breakfast lovers that have little to no time before going about your busy day because you can easily prep a grab-n-go serving of this the night before.
If you’re lucky enough to be a bum like me who can sleep in and take some extra time in the mornings, try topping off your overnight oats with some extra frothy oat milk foam. I promise it makes the experience even more memorable.
How to prepare Vegan Macchiato Overnight Oats:
- To achieve the classic overnight oat texture and consistency, it is actually best to prepare the oats ahead of time, preferably overnight. In a bowl add oats, chia seeds, cold brew coffee and plant-based milk. Sweeten with a little bit of maple syrup or honey if you would like. Mix everything well and transfer into an airtight container or into a few jars. Refrigerate for a few hours or overnight.
- As for the plant-based milk I highly recommend either using homemade milk, but if you would like to buy a quality brand, I personally like Elmhurst Cashew Milk. It contains 2 ingredients only, is super creamy, and tastes absolutely amazing. You won’t believe it’s store-bought.
- If using cold brew, I suggest you prepare a batch ahead of time. You’ll find that it’s a lot cheaper, and there’s just something about homemade that makes it tastes so much better 😛 More details on how to make the perfect batch of cold brew here. If you don’t have enough time to prepare your own, I’d recommend either using the Starbucks brand or Califa’s cold brew.
- To make these overnight oats even more fun, add your favorite ingredients/toppings such as nut butters, nuts, seeds, fruit etc.

Vegan Macchiato Overnight Oats

Ingredients
- 1 cup gluten-free old fashioned rolled oats (or quick cooking oats)
- 1 1/2 tbsp chia seeds
- 2/3 cup unsweetened cashew milk (or oat, almond etc.)
- 1/3 cup cold brew coffee
- 1 tbsp maple syrup (optional)
Top Layer
Instructions
1. In a bowl mix oats and chia seeds. Stir in the milk, maple syrup and coffee and combine well. Transfer mixture into an airtight container and refrigerate overnight.
2. In the morning froth milk in a milk frother machine or heat up in a small pot over medium-high heat for 5 minutes and froth with hand frother. Transfer overnight oats in two glasses. Top off with some extra coffe, maple syrup and milk foam.

Hi! Due to the current circumstances I’ve only got flax seeds in my cupboard do you think these are a good sub for chia?

Yes, definitely, you can use flax seeds but I’d suggest grounding them beforehand. Flax meal works better with liquid.
