Ingredients
1 cup ground roasted almonds
1/2 cup flaxseed meal
1/2 cup pumpkin seeds
2/3 cup sesame seeds
1 cup sunflower seeds
2 tbsp chia seeds
2/5 cup water
11/4 tsp salt
2tbsp fresh thyme
5 eggs
A handful sesame seeds for the topping
Method
Roast sunflower, sesame and pumpkin seeds in a pan.
Mix roasted seeds with all of the other dry ingredients to a fine meal. Add eggs, water, and pour into oiled (coconut) donut/bagel pan. Sprinkle with sesame seeds and bake in oven at 350 F for about 50-60 minutes.
Let bagels cool in pan before removing. To store cut all bagels in half and keep frozen in your freezer. Toast the bagel halves before serving. That way you'll be able to make a few batches in advance 🙂
