Valentine Cinnamon Cookies
Every year millions of lovebirds spend Valentine's Day together. They either go out for dinner, plan something fun or buy roses or candies for each other. I like to spend time in the kitchen and get creative only to surprise my fiance with homemade treats. Selfmade goodies taste better anyways 🙂
Ingredients:
60g buckwheat (ground)
20 g roasted sunflower seeds (ground)
170 g roasted almonds (ground)
1 chia egg (1 tbsp almond milk, 1 tbsp chia seeds)
3 tsp cinnamon
50 g coconut sugar
25g tapioca flour
40g brown rice flour
50g maple syrup
1 tsp baking powder
Serving: 15-20 heart cookies (depending on the size)
Method:
Preheat oven to 150C/300F.
Mix all dry ingredients. Mix all wet ingredients and add to the dry ingredients. Knead dough to a sticky ball. If the dough feels too sticky add some tapioca. Refrigerate for 15-30 min. Roll dough out to around 5 mm thickness and cut cookies with preferred cookie cutter. Bake for 13-15 minutes in the oven. Cookies will get crispy once cooled down. Glaze with xylitol sugar, beet powder and almond milk mixture for some extra sweetness.
