How is it already end of September? It feels like it was only yesterday when my fiance and I moved here to Colorado in April and bought our first home together. With all the wedding planning and house renovations going on in the last few months, summer flew right past us and I feel like we didn’t enjoy it as much as we should have. The one thing we wouldn’t miss out on is munching on fresh seasonal fruits. I had so much fun experimenting with them in my recipes this year. Every other weekend we went to a local farmers market here in the Springs and brought home a bucket full of fresh fruits and vegetables. One of my favorite fruits to enjoy in summer are Palisade peaches. The refreshing sweetness of a delicious peach is unbeatable. Thats why they ended up in my cooking multiple times this year. The Peach Cobbler Smoothie is one of my breakfast creations featuring the fruit. It is so easy to make, tastes like Peach Cobbler, and is plant based and sugar free. I can’t think of a better way to enjoy a beautiful summer morning.
Ingredients:
2 cups plant based milk (I used my homemade Oatmilk)
2 tbsp almond butter
1 cup frozen peaches (cubbed)
2 tbsp rolled oats
1 medjool date (pitted)
1/4 tsp cinnamon
2 tbsp chia seeds
4 tbsp coconut milk
Method:
For the chia pudding, mix the chia seeds with the coconut milk in a bowl. Let sit for about 10 minutes.
For the peach smoothie add all ingredients in a high speed blender and mix until smooth. Add to the chia pudding with some fresh fruit and serve immediately.
