Spring has finally sprung and I could’t be more excited for the coming change in weather. I’ve always found spring to be such a beautiful time of year as nature wakes up after a long winter. To celebrate, I have a bunch of ideas perfect for this colorful season that I’m looking forward to testing out, starting with these stunning Acai popsicles.

These little stunners are not just pretty on the eyes though, they’re total health bombs. Acai berries are a low sugar superfood, and not only are they the stars of this recipe, these nutrient dense berries are chock-full of powerful antioxidants, vitamins and minerals and provide an array of potential health benefits that people are just beginning to understand.
This delicious Acai drink provided by Pure contains the whole berry, including the skin and fruit pulp, and is not diluted with other juices. It makes for the perfect popsicle base.
In addition these babies are made up of delicious blackberries, coconut milk, dates and a hint of vanilla. So yeah, a very healthy snack that will make you come back for more.
If you have little kids, you will put a smile on their face for sure. These are a perfect treat that will make your kids happy without feeding them unnecessary sugar.
Servings: 12
Ingredients:
1/2 bottle Pure Acai drink
1 cup frozen or fresh blackberries
1 can of full fat coconut milk
2 softened medjool dates (pitted)
1 tsp vanilla extract (1/4 tsp bourbon vanilla)
Method:
In a small bowl pour hot water over dates. Let sit for about 10 minutes.
Squeeze out any excess liquid and place in a high speed blender with the coconut milk and vanilla. Blend for about 1-2 minutes until fully combined.
Puree the blackberries with the acai in a food processor until just combined. First pour the acai liquid into your popsicle molds until half full. Fill up to the top with the coconut milk mixture. Freeze in the refrigerator for about an hour, add wooden sticks and keep freezing until popsicles are solid. Enjoy as a dessert or simply as a healthy snack for in-between meals.
