Anyone who follows my cooking knows that I love to sweeten my desserts with natural ingredients so most of the time I use medjool dates. Dates are so sweet and versatile, you can do so much with them in the kitchen. I love to sweeten my milks, ice cream, baked goods, raw desserts etc. and they make for the healthiest caramel sauce. I love how the dates provide that rich sweet caramel flavor along with fiber, vitamins and minerals. This date caramel sauce definitely still contains sugar but in a healthier, natural unprocessed way. To me that is the most important factor when it comes to preparing sweet treats.
You can use this delicious date caramel in your raw desserts or just simply as a topping for healthy treats. It took me a little while before I got the consistency right, but here we are. These are the instructions you need to make the most perfect date caramel.
Ingredients:
2 cups medjool dates (pitted)
2 cups hot water
1/4 cup cashew milk (any plant-based milk works)
1/2 tsp salt
Method:
To prepare the dates, soak them in hot water for about 10 minutes. Transfer dates into a food processor or high speed blender and reserve the liquid. Add one cup of liquid, salt and the milk. Process and add 1 tbsp water at a time until the mixture is pourable enough for you. This process can take up to 10 minutes depending on the food processor. Transfer caramel sauce into an airtight container and store in the refrigerator for up to 2 weeks.
