Breakfast Granola Yogurt Tarts

Why not be creative and transform your granola into something fun? I recommend mixing things up with these delicious wholesome Granola Tarts filled with a fresh coconut yogurt filling.  It’s great for breakfast. The best part, you can top them off with whatever fruit you desire. They’re super crunchy on the outside and that creamy yogurt filling is so light and delicate you’ll be in heaven… plus, how cute are these?

I absolutely love my Granola and yogurt for breakfast but this week, I thought I’d change things up. I have to admit, it took me quite some time to assemble these tarts before baking, but I promise, it’s worth the effort.

For the crust, simply mix all granola ingredients and press evenly into the tart tins. You can use a spatula or a spoon but I suggest you use your fingers. The tarts might need some adjusting after baking in the oven for 10 minutes. For this, its best to use a spoon and reshape them. Once the tarts are toasted and golden brown, take them out of the oven and let them cool on a rack for about 10 minutes. Carefully remove the tarts from the tins and load them up with your delicious yogurt filling. I topped them off with berries and bananas but the sky is the limit here.

Make sure you serve them immediately, when the crust is still crispy and the yogurt is fresh. You can store these tarts in an airtight container in the fridge for a day or two.

Ingredients:
2 cups gluten-free rolled oats
2/3 ground almonds (roasted)
1/2 cup shredded coconut
5 tbsp coconut oil (melted)
1/2 cup maple syrup
orange zest (1 orange)
1 can coconut cream
2 cups coconut yogurt (unsweetened)

Method:
Preheat oven to 360 degrees Fahrenheit. Grease 5 (4 inch) mini tart pans and set aside. In a medium sized bowl mix together oats, ground almonds, coconut and orange zest. Add in maple syrup and coconut oil and mix well until evenly coated. Transfer granola mixture into the tart pans pressing it down on the bottom and up the sides. Place pans onto a baking sheet and bake in the oven for about 20 minutes until granola tarts are golden brown. After 10 minutes in the oven, take out tarts and use a spoon to reshape tart if necessary. Once the tarts are done, take out of the oven and place onto a cooling rack. They will harden after 5-10 mintues. Gently remove tarts from tart tins.

To prepare the yogurt filling, heat coconut cream in a pot over low heat. Heat and stir until creamy. Add in the yogurt and mix well until fully combined. Fill tarts with yogurt filling, garnish with fruit and serve immediately.

This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.

Recipe: 
Hazelnut Milk
1 cup roasted hazelnuts
Water, filled to the minimum line of the Almond Cow

Truffles
160 ml freshly made hazelnut milk
1shot espresso (or strong brewed coffee)
½ cup finely ground hazelnuts
1 cup dairy-free chocolate chips
1 tbsp coconut oil

Coating
1 cup dairy-free chocolate chips
Chopped hazelnuts (optional)

Instructions
Make the hazelnut milk: Process hazelnuts and water in the Almond Cow. Measure 160 ml milk for the recipe; refrigerate the rest for later use.

Prepare filling: Heat hazelnut milk and espresso until hot (not boiling). Pour over chocolate chips and coconut oil; let sit 2-3minutes, then stir until smooth. Fold in ground hazelnuts. Chill until firm, up to 3 hours.

Shape & coat: Roll into truffles and freeze for 2 hours. Melt remaining chocolate, dip truffles, and garnish if desired. Let set before serving or storing. Enjoy!
