Tis the season for linzer cookies, so called because they originated in Linz, Austria. These jam filled shortbread cookies are a healthy take on one of my hometown classics. They are a must for the Christmas season and will make a delicious addition to your Christmas cookie box this year. Trust me, Santa will dig these.
After spending hours and hours of baking in the kitchen I am finally done with all the Christmas cookie recipes this year and I am excited to share these delicious Austrian linzer cookies. The cool thing about these is that they are a lot healthier than the original version from back home. Everyone loves the traditional buttery sweet linzer cookies 🙂 However for all the clean eating fans out there I came up with a healthy gluten-free, refined sugar-free and dairy-free version.
For these tasty cookies I used my Vanilla Crescent Cookie dough minus the vanilla 🙂 They are so deliciously nutty, naturally sweetened and super easy to make. The homemade cranberry jam makes these cookies soft and tart in a really good way. I put out an assortment of cookies for friends we had over this past weekend, and these were one of the first varieties to disappear. Be sure to try these out before the winter is over!
How to make the perfect Linzer cookies:
- you will need a linzer cookie cutter set or make it work with different shapes and sizes of cookie cutters. I really love the flowery shape of them so I used a specific linzer cookie set linked above. If you don’t have that, anything works really.
- Prepare your favorite jam to fill these cookies with. I made my own cranberry jam using non refined sweeteners such as dates and a little bit of maple syrup. If its too much work for you and you don’t mind, just use your favorite store bought jam. That way you’ll save some time.
These linzer cookies are one of the classics from my Grandmas Cookie box. I managed to put a healthy twist on them and am happy to say they are definitely crowd pleasers for the festive season.

Healthy Linzer Augen
These jam filled linzer cookies are a healthy take on one of my hometown classics. They are a must for the Christmas season and will make a delicious addition to your Christmas cookie box this year.
Ingredients
- 3/4 cup (70g) oat flour (sub with brown rice flour)
- 1/3 cup (40g) brown rice flour
- 200g ground roasted nuts (hazelnuts, almonds, pecans)
- 1/4 cup (25g) tapioca flour
- 1/3 cup (50g) golden coconut sugar
- 50g maple syrup
- 1 tsp baking powder
- 1 egg
Cranberry Jam
- 2 cups cranberries
- 1/2 cup water
- 1/4 cup maple syrup
Coating
Instructions
Preheat oven to 300F and prepare cookie sheet with parchment paper.
In a bowl mix all dry ingredients. In a small separate bowl mix the egg with maple syrup.
Add to dry ingredients and combine into a sticky dough. If too sticky add tapioca flour. Wrap in foil and place in the refrigerator for about 15 minutes.
On a floured surface roll out dough to 3mm thickness. Cut out cookies with a preferred cookie cutter and place on the cookie sheet. Bake for about 10-13 minutes in the oven.
In the meantime prepare cranberry jam. Place cranberries, water and maple syrup in a small pan. Simmer on low heat until cranberries are soft. Once the cranberries are soft enough transfer to a small bowl and puree with a hand mixer. Transfer into an airtight jar and place in fridge to cool down.
Take cookies out of the oven and let them cool down for about 15 minutes.
To assemble add half a teaspoon of cranberry jam to one of the cookies. Then place another cookie on top. Transfer assembled cookies onto a plate or baking sheet. Let sit for half an hour and then transfer into an airtight container.
Optionally add powdered sugar (monkfruit sweetener)
Store cookies in fridge for up to one week.
