Chocolate Pecan Cookies
These crunchy chocolate pecan Christmas cookies just look so cute! The roasted pecans in the cookies and the pecan praline on top mixed with chocolate will leave you wanting more. They are so easy to prepare and make for the perfect nutty Christmas cookie.
Ingredients
- 3/4 cup (70g) oat flour
- 1/3 cup (40g) brown rice flour
- 200g ground roasted pecans
- 1/4 cup (25g) tapioca flour
- 1/3 cup (50g) golden coconut sugar
- 50g maple syrup
- 1 tsp baking powder
- 1 egg
Pecan Praline Topping
- 1/2 cup roasted pecans
- 1/3 cup maple syrup
Chocolate Coating
- 4 oz of stevia sweetened/paleo chocolate
- 1 tbsp coconut oil
Instructions
Preheat oven to 300F and prepare cookie sheet with parchment paper.
In a bowl mix all dry ingredients. In a small separate bowl mix the egg with maple syrup.
Add to dry ingredients and combine into a sticky dough. If too sticky add a little bit of oat flour. Wrap in foil and place in the refrigerator for about 15 minutes.
On a floured surface roll out dough to 1/8 inch thickness. Cut out cookies with a preferred cookie cutter and place on the cookie sheet. Bake for about 10-13 minutes in the oven.
In the meantime prepare Pecan praline crumble.
Place roasted pecans with maple syrup in a medium sized pan and cook over medium high heat for about 5-10 minutes until almost no liquid remains and maple syrup has completely coated the nuts.
Remove from pan and transfer onto a lined baking sheet. Let maple pecans cool/harden for about 10 minutes. Place in a food processor and process into a crumble.
Once cookies are done take out of the oven and let cool for about 15 minutes.
In the meantime prepare chocolate glaze by melting chocolate and coconut oil in a small saucepan. Dip cookies into the chocolate and glaze them halfway. Sprinkle with pecan praline crumble and let dry for about 5-10 minutes in the refrigerator.
Store cookies in an airtight container for up to one week
Notes
*To roast pecans place nuts on a baking sheet in the oven and bake for about 10 minutes on 350F.
