Good news for all the Peanut Butter freaks out there. I’ve finished tweaking the perfect cookie recipe for you. These crunchy delights are made in one bowl and require 20 minutes of your time. No dairy, no eggs, no gluten and no refined sugars. You think I’m exaggerating? Well let me tell you, you’re mind is gonna be blown once you try these 😛
How to prepare these vegan peanut butter cookies:
For too long I’ve been trying to make the perfect peanut butter cookie but never was I able to nail a consistency and texture I actually liked. Peanut butter has a tendency to prevent a cookie from spreading on a baking sheet, so it’s important to use a creamier/smoother peanut butter for this recipe. I added a bit of extra smooth nut butter (Trader Joes) to solve this problem.
You will also need a hand mixer or machine such as a kitchen aid for the first step of mixing the butter with coconut sugar to ensure everything is mixed in completely. Add the rest of the ingredients and mix until it’s smooth. At last you can fold in some chocolate chips or other tasty ingredients (raisins, nuts, seeds etc). Whatever your heart desires!
Scoop the dough (with an ice cream scoop) onto a lined baking sheet and make sure to leave some space in-between each cookie. Flatten the cookies with your fingers just a tad and then bake them in the oven for about 13-15 minutes. If you prefer your cookies chewy and soft, take them out of the oven after around 10-13 minutes.

Ingredients
- 3/4 cup oat flour
- 1/2 cup gluten free flour blend
- 1/4 cup rolled oats
- 3/4 cup peanut butter (smooth)
- 1/4 cup almond butter
- 1 cup golden coconut sugar (sub with regular coconut sugar)
- 1 1/2 tsp baking powder
- 1/3 cup unsweetened plant-based milk*
- 1/4 cup unsweetened or stevia sweetened chocolate chips
- 1/4 tsp salt
Instructions
1. Preheat ovent to 350F and line a baking sheet with parchment paper.
2. In a medium sized bowl add peanut butter, almond butter and coconut sugar. Mix with a hand mixer or kitchen aid until combined.
3. Add dry ingredients (except for the chocolate chips) to the peanut butter mix. Add milk and mix until combined.
4. Stir in chocolate chips and scoop dough (with ice cream scoop) onto baking sheet leaving extra space (2-3 inches) between cookies.
5. Bake in the oven for about 15 minutes until edges begin to turn brown. Let cool for about 5-10 minutes.
6. Serve immediately and store leftovers in an airtight container for up to two days.
