Vegan Baked Oatmeal

My go to breakfast will always be my beloved breakfast smoothie, but with the extra time on my hands lately, I’ve been feeling more creative. Behold, the fruits of my labor: a new recipe that I’ve never made before šŸ˜€

Personally I am a huge fan of homemade oatmeal. Eating it warm has a grounding/comforting effect on me. In general, nutritious meals made with quality ingredients make me feel like that, and oatmeal has always been a go to for me. The great thing about this recipe is that it’s a lot less involved than preparing oatmeal on the stovetop which is what most people do. Just mix a few wholesome ingredients and let the oven do the rest šŸ˜› It might take a bit longer than usually but it’s definitely worth it.

You’ll end up with a deliciously healthy filling breakfast that you’re going to love. The oven will give the outside a crispy texture that’s totally awesome.

how to make the perfect vegan baked oatmeal

  • use any kind of plant-based milk. I used almond milk but any other vegan milk will do the job. Oat milk would be another solid choice, or you could use hazelnut milk, which will impart a really awesome hazelnuts flavor. Get creative!
  • Normally baked oatmeal is made with eggs, but I would recommend using chia or flax seeds instead. These are amazing binding agents for vegan dishes.
  • be create with the ingredients. From nut butters to frozen fruits, you could really use anything to create a dreamy baked oatmeal. Whatever you can find in your pantry. :p

Ingredients

  • 3 cups gluten-free rolled oats
  • 3 cups Elmhurst Milked Almonds
  • 1 cup frozen or fresh berries
  • ā…“ cup maple syrup
  • 2 tbsp coconut oil (melted)
  • ½ cup almonds
  • ¼ cup chia seeds
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract (optional)

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. Mix all dry ingredients in a bowl and set aside.
    In a separate bowl mix all wet ingredients.
    3. Mix all dry ingredients into wet ingredients, mix well until combined and set aside for about 5-10 minutes.
    4. Pour the oatmeal mixture into an 8 inch baking dish or 3-4 smaller coquette dishes.
    5. Sprinkle some additional chopped almonds and blueberries on top and bake in the oven for about 40-45 minutes.
    6. Serve while still warm with a fresh glass of milk.

Layers of creamy caramel ice cream, gooey caramel, and a crisp chocolate shell… all without dairy or refined sugar. Yes, it is possible — and yes, you need to try them. šŸ™Œ

Perfect summer treat ā˜€ļø → save the recipe below.

Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
