Sharing with you today a variety of my favorite healthy cookie recipes. From peanut butter to double chocolate, you’ll be sure to find something in this delicious mix of cookie perfection that you’ll love! All of them are gluten-free, dairy-free, and refined sugar-free! Super easy to make, it’s the perfect way to sweeten your day.

With all that self quarantine action going on at the moment, being stuck at home I find myself in the kitchen even more than usual. I just can’t help it. It’s relaxing and exciting at the same time. Whenever I really love a recipe, I just can’t stop talking about it. Usually my husband is the victim of my excited ramblings, but at least he gets some awesome cookies out of it, so hey, I can’t feel too bad 😛

I’ve been able to come up with four delicious cookie recipes that are way healthier than what you’ll find at the store, plus made from scratch just tastes better.

So, let’s start off with these delicious vegan peanut butter chocolate chip cookies.

1. Vegan Peanut Butter Cookies
They are crunchy on the outside and super fudgy in the center. One bite and you will be swept away to a Peanut Buttery heaven. They are super easy to make and require only a few main ingredients. Perfect as a healthier plant-based treat.

2. Gluten-free Oatmeal Cookies
These soft oatmeal cookies are made with wholesome pantry ingredients in under 20 minutes. They are crunchy on the outside, soft in the center and especially tasty when they are still warm. Perfect treat for breakfast, or really any time of day.

3. Paleo Chocolate Chunk Tahini Cookies
Every single bite is tahinilicious. These tasty paleo chocolate chunk tahini cookies are crunchy on the outside, chewy in the center and super easy to whip up. Perfect recipe to get a fast cookie fix.

4. Paleo Brownie Cookies
Crisp on the outside with a decadently chewy center, these cookies will really test the limits of your self control. If you make some of these for family or friends make sure to save some for yourself because they disappear quickly!

Made with protein-packed strawberry yogurt, frozen into heart shapes, then dipped in a crisp chocolate shell. They’re creamy, refreshing, and so easy to keep stocked in the freezer for hot days.

Save this recipe
Ingredients
• 2 cups Greek yogurt
• ¼ cup maple syrup
• 1½–2 scoops Collagen Protein powder 
• 1 cup fresh strawberries, finely chopped
• 1½ cups refined sugar-free chocolate chips
• Crushed freeze-dried strawberries or raspberries (optional)

Directions

Mix the Greek yogurt, maple syrup, and collagen until smooth. Fold in the chopped strawberries.
Spoon into heart-shaped silicone molds and freeze for 3–4 hours, until firm.
Melt the chocolate chips in a heat-safe bowl over gently simmering water, stirring until smooth.
Dip each frozen yogurt heart into the melted chocolate, letting the excess drip off.
Place on parchment paper, sprinkle with crushed freeze-dried strawberries or raspberries, and let the chocolate harden.

One day before Christmas and keeping things simple One day before Christmas and keeping things simple 🎄
This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.
