Easter is one of my absolute favorite holidays. I still remember having to look for my candy filled easter basket every single year. It is a tradition in Austria to hide not just eggs, but all of the goodies for kids to find. My parents weren’t too clever with their hiding spots since most of the time I’d find it in our bathtub or washing machine 😛 Miss those days.

Even though we are dealing with some major changes this year and have to stay at home to keep everyone safe, I’d like to bring you some of my favorite easter treats.

It doesn’t matter  if your’e celebrating or not, these tasty recipes will surely sweeten up your weekend, plus they are a lot healthier than the usual easter candy fare.

Whether you enjoy cooking or baking, if you are a chocolate fan or not, there’s a recipe for everyone in this healthier easter basket. So, let’s start with my number one: these tasty hazelnut chocolate truffle eggs!

If you’re a fan of anything chocolate, do yourself a favor and try these homemade vegan hazelnut chocolate eggs. They are decadently rich, creamy, and will melt in your mouth. It’s the perfect treat to munch on for this year’s Easter celebrations.

2. No-Bake Carrot Cake Bites
These scrumptious little no-bake carrot cake bites taste just like a traditional slice of carrot cake, but are so much healthier. They are raw, vegan, naturally sweetened, and super easy to make. This is the perfect treat to make and enjoy at home during the holidays.

3. Healthy Almond Joy Eggs

4. Vegan Carrot Cake Eggs
These easter themed vegan carrot cake eggs are an absolute dream. They are super moist, full of carrot cake flavors and a lot healthier than the traditional version. For these light and fluffy eggs I used my Vegan Carrot Cake Cupcake recipe and an Easter egg silicone mold that I got from Amazon.

5. Linzer Bunnies
In my world, every holiday needs a proper linzer cookie. 😛 Therefore I added these cute little linzer bunnies into my easter basket. For the cookie batter I used my classic linzer cookie recipe plus some easter cookie cutters I found in the kitchen.

In case you were wondering, I filled the easter basket with some additional homemade vegan white chocolate bunnies, using this easter mold from Amazon, and these beautifully piped easter nest meringues. You can find the Meringue Base recipe here.

One day before Christmas and keeping things simple One day before Christmas and keeping things simple 🎄
This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.

Recipe: 
Hazelnut Milk
1 cup roasted hazelnuts
Water, filled to the minimum line of the Almond Cow

Truffles
160 ml freshly made hazelnut milk
1shot espresso (or strong brewed coffee)
½ cup finely ground hazelnuts
1 cup dairy-free chocolate chips
1 tbsp coconut oil

Coating
1 cup dairy-free chocolate chips
Chopped hazelnuts (optional)

Instructions
Make the hazelnut milk: Process hazelnuts and water in the Almond Cow. Measure 160 ml milk for the recipe; refrigerate the rest for later use.

Prepare filling: Heat hazelnut milk and espresso until hot (not boiling). Pour over chocolate chips and coconut oil; let sit 2-3minutes, then stir until smooth. Fold in ground hazelnuts. Chill until firm, up to 3 hours.

Shape & coat: Roll into truffles and freeze for 2 hours. Melt remaining chocolate, dip truffles, and garnish if desired. Let set before serving or storing. Enjoy!
