Who wants to munch on these deliciously fudgey ice cream popsicles? While chocolate fudge has to be one of my favorite treats, it’s super rich and can feel overfilling when it’s 90-100 degrees outside. I decided to turn some of my favorite treats into these creamy paleo fudgsicles. With only four wholesome ingredients this recipe is super healthy and easy to prepare.
Growing up chocolate ice cream was a no brainer for me. Any chance I had to pick out some ice cream, it had to be chocolate lol. You can imagine how excited I am to share these bad boys with you all today.
How to prepare these easy Paleo Chocolate & Hazelnut Fudgsicles
- If you don’t have a popsicle mold already, here is a cheap one I got from Amazon that seems to do the trick.
- In a small saucepan heat hazelnut milk and dates over medium heat. Simmer until dates have almost dissolved. Puree with a handmixer. Skip this step if you want to add maple syrup instead of dates .
- Add chocolate and stir until chocolate has melted and fully mixed into the milk.
- Transfer into a measuring cup/bowl and set aside to cool.
- Evenly pour hazelnut chocolate liquid into 10 popsicle molds, add wooden sticks, and set in the freezer for about 3-4 hours.
- Dip in melted chocolate and coat with crushed hazelnuts if you want. If you love chocolate like I do, you’ll not want to skip this step 😛
- Store popsicles in an airtight container or popsicle wrappers in the freezer for up to one month.
Super simple right? you can prepare these ahead of time or make them last minute. Either way your loved ones will be thrilled.

Ingredients
Popsicles
- 800 ml (3 1/3 cups) Unsweetened Hazelnut Milk (sub with coconut milk)
- 8-10 oz stevia sweetened/unsweetened chocolate/chocolate chips
- ⅓ cup hazelnut butter (sub with any nut butter)
- 5-6 pitted medjool dates if using unsweetened chocolate ( sub with ⅓ cup maple syrup)
Glaze
- 3-4 oz chocolate (melted)
- crushed hazelnuts
Instructions

2. Add chocolate and stir until chocolate has melted and fully incorporated into the milk.
3. Transfer into a measuring cup/bowl and set aside to cool.
4. Evenly pour hazelnut chocolate liquid into 10 popsicle molds. Add wooden sticks and set in the freezer for about 3-4 hours.
5. (Optional) Dip in melted chocolate and coat with crushed hazelnuts.
6. Store popsicles in an airtight container or popsicle wrappers in the freezer for up to one month.
