The Summer heat just won’t quite here in Colorado and all I want to eat for breakfast is delicious and refreshing fruit smoothies. While I enjoy my daily berry almond butter smoothie to no end, I thought I’d change it up a bit with this beautifully layered rainbow smoothie.
It has all the fruits and vegetables you’d want in a healthy but delicious breakfast smoothies, plus it’s packed with additional fiber. This should allow you to start your day with lots of energy and a feeling of satisfaction for having made a healthy choice.
How to make this beautifully wholesome Rainbow Smoothie:
To prepare this smoothie you will need a variety of different fruits. Whether they are fresh or frozen, totally up to you. Frozen fruit tend to add more color to your smoothie. For these layers, I used frozen blackberries, frozen strawberries, frozen bananas, frozen mango, kiwi and spinach. To retain even thick layers of smoothie I added some chia seeds and flax meal. Who doesn’t love some additional fiber?
In a high speed blender or food processor add ½ tbsp of chia seeds, ½ tbsp of flax meal, ½ tbsp of almond pulp (optional), ½ cup of plant-based milk, frozen blueberries and optional butterfly pea powder. Blend until completely smooth and transfer equally into two glasses leaving room for 5 more layers.
Repeat the process using chia, flax, and milk as the base and then add the respective colored ingredients for each of the other rainbow smoothie layers.
Enjoy immediately. Make these beautifully healthy smoothies with your kids. They will love you for it 🙂

Ingredients
Rainbow Smoothie:

- 3 tbsp Flax meal

- 3 cups Almond milk
Blueberry Smoothie
- ½ cup Frozen blueberries
- ½ tbsp Butterfly pea powder (optional)
Green Smoothie

- 1 Kiwi
Mango Smoothie
- ½ cup Frozen mango
Banana Smoothie
- 1 Frozen banana
Strawberry Smoothie
- ½ cup Frozen strawberries
Blackberry Smoothie
- ½ cup Frozen blackberries
Instructions
1.
