Raw Cookie Dough Bites

Delicious egg-free raw cookie dough bites that don’t need to be baked to be enjoyed. These tasty little treats are rich and decadent but prepared with wholesome ingredients. A guaranteed party pleaser!


Raw Cookie Dough Bites

Were you one of those kids who grew up stealing cookie dough from the bowl when your mum was baking cookies? Well, you are not alone. I know in my household, about. half the cookie dough. would never make it to the oven.  Whether it was  muffins, cake,  or any other baked goods my mum was prepping, you would find me in the kitchen trying to eat some of it before it went in the oven. 

Well with these guys, they’re meant to be. enjoyed out of the oven.   It’s so much. fun being an adult and making my own rules. They are raw but completely egg- and dairy-free. Packed with wholesome ingredients these cookie dough bites are healthier than you would expect,  but still incredibly rich and decadent.  Make sure to secure some for yourself if you bring them to a party,  because they’ll be gone šŸ˜›

Raw Cookie Dough Bites

What do you need to prepare these:

  • for this recipe I used oat flour. If you want them to be grain-free, you can substitute with other gluten-free flours such as cassava and almond flour. Make sure to use a bit more to achieve the same consistency as cassava and almond flour are more absorbent than oat flour. 
  • To retain the light color of raw cookie dough I used light agave syrup as a refined sugar-free sweetener. If that’s unavailable to you, feel free to use either honey or A-grade light amber maple syrup.

  • Again, to keep the cookie dough bites as authentic as possible I used light colored nut butter and tahini. Either cashew, peanut butter, or raw almond butter works. 
  • Instead of butter I used melted coconut oil. It will help holding these bites together. If you don’t like coconut flavor make sure to use refined coconut oil. 
  • This is optional but I like to pack my treats with additional collagen powder.  Leave that out if you’re not a fan.

  • Whats raw cookie dough without chocolate chips? For me they are a must as they add that additional sweet kick. I used Lily’s stevia sweetened dark chocolate baking chips to keep the recipe as healthy as possible šŸ™‚
  • add a pinch of salt for that sweet and salty taste. If you are using salted nut butter, leave out the additional salt.

Total Time: 10 minutes

Ingredients

  • 1 1/3 cup oat flour
  • 1/4 cup light agave syrup (sub with maple syrup)
  • 1/2 cup nut butter (cashew, peanut, almond etc)
  • 1/4 cup tahini
  • 1 1/2 tbsp coconut oil (melted)
  • 3 tbsp collagen powder (optional)
  • pinch of salt
  • 1/3 cup chocolate chips

Instructions

  1. In a bowl add all ingredients except for chocolate chips.
  2. Mix together until fully combined.
  3. Fold in chocolate chips and use an ice cream scoop to divide batter evenly into small bites.
  4. Roll with your hands into balls and store in the refrigerator for up to one week.
  5. Remove from the refrigerator a few minutes before serving.

Save this recipe
1 cup cashews, soaked
1 cup dairy-free milk, unsweetened 
5 medjool dates, softened with boiled water
1 Bourbon Vanilla bean or 1 tsp vanilla extract 
5-6 frozen strawberries 
1 1/2 cup chocolate chips, I used @hukitchen 

In a blender or food processor add all ingredients . Process until smooth! Transfer into ice cream bar mold. Freeze for about 2-3 hours. Melt chocolate: Coat bars in chocolate mixture and sprinkle with freeze dried strawberries Put back in freezer for 5 min. Enjoy! Layers of creamy caramel ice cream, gooey caramel, and a crisp chocolate shell… all without dairy or refined sugar. Yes, it is possible — and yes, you need to try them. šŸ™Œ

Perfect summer treat ā˜€ļø → save the recipe below.

Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

No dairy. No refined sugar. Just pure summer joy in every bite. šŸ’«
Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
