Strawberry Dessert Tacos

These delicious strawberry dessert tacos feature a yummy coconut cream filling and fresh marinated strawberries in a crispy and lightly sweet taco shell. The perfect dessert for an easy but delicious summer treat.

Ever tried sweet tacos before? It’s the first time for me and I am obsessed 🙂 These tasty strawberry sweet tacos are not only deliciously healthy but also super easy to prepare. The perfect treat to bring as a party pleaser. 

A crispy and lightly sweet grain-free taco shell filled with freshly marinated strawberries and a yummy cacao infused coconut cream. Drizzle them with some melted chocolate, and you’ve got yourself a winner. Thanks to Sprouts I am able to buy fresh produce and the best wholesome ingredients nearby to prepare this delicious meal in a healthier way.

How to prepare these strawberry dessert tacos

Taco Shells

To prepare the taco shells, preheat the oven to 400 degrees Fahrenheit. Cut the cassava flour tortillas into 3.5-4 inch circles using a round cookie cutter. Repeat until you have 10 tortilla circles.

Place tortilla circles onto a parchment paper lined baking sheet. On both sides spray each with coconut oil and sprinkle with sugar. I used monk fruit sweetener for mine. Feel free to use coconut sugar or cane sugar.

Flip a muffin tin upside down. Place one tortilla piece in between every two muffin cups until all 10 are in place.

Bake in the oven for about 6-7 minutes until taco shells are slightly golden and crips.

Take taco shells out of the oven and and remove from the muffin tin. Make sure to carefully remove the them from the muffin tin right after they are done baking. To avoid sticking to the muffin tin or any breakage.

Filling

Meanwhile, in a medium sized bowl whip coconut cream with a hand mixer for about 4-5 minutes until fluffy. Add 1 tsp of cacao powder and mix until combined. Set aside.

Wash and cut strawberries into small pieces and transfer into a bowl. Add 1 tbsp of agave syrup and combine. To assemble the tacos, pipe coconut cream into the taco shells and top off with the marinated strawberries. Drizzle them with some melted chocolate. Enjoy.

Ingredients

  • Mikey's Cassava Flour Tortillas (burrito size)
  • 2 tbsp granulated monk fruit sweetener (sub with coconut sugar or cane sugar)
  • 1 tbsp agave syrup (sub with maple syrup)
  • Strawberries, 1 container
  • 1 can (13.5 oz) coconut whipping cream (sub with regular coconut cream)
  • 1 tsp cocoa powder
  • Coconut oil cooking spray

Instructions

1 cup cashews, soaked
1 can coconut cream, unsweetened 
5 medjool dates, softened with boiled water
1 Bourbon Vanilla bean 
1/3 cup chopped chocolate, dairy-dree

1 1/2 cup chocolate chips, dairy-free
1-2 tbsp coconut oil

In a blender or food processor add cashews, coconut milk, vanilla and dates. Process until smooth! Once the mixture is cool enough, stir in chopped chocolate. Transfer into ice cream bar mold. Freeze for 2-3 hours. Melt chocolate with coconut oil. Coat vanilla chocolate bars in chocolate mixture. Put back in freezer for 5 min. Enjoy! Coffee chocolate chip Klondike bars — made from scratch and ridiculously good. ☕🍫🍦 Creamy coffee ice cream, melty chocolate chips, and that signature crackly shell… but cleaner. My recipe, and trust me, you need it. 👇 

Recipe:
1/2 cup cashews, soaked in hot water for 1-2 hours
1 can coconut cream or milk
4-5 medjool dates, soaked in hot water for 10 minutes, drain
Double shot espresso , sub with 1 tbsp instant coffee
2 tbsp cashew butter, sub with any nut butter
1/3 chopped chocolate chunks, I used @hukitchen 
1 cup chocolate chips, melted in a bowl with chopped nuts! I used almonds! 

In a blender add all ingredients except for the chocolate chunks and almonds and blend until smooth. Fold 1/3 cup chopped chocolate chunks and pour in your preferred ice cream mold. Freeze for 3-4 hours. melt chocolate, mix in chopped almonds. Dip ice cream bars in melted chocolate and let sit until fully hardened. Store in freezer! Enjoy! #dairyfreerecipes #klondike

Dairy-free. Refined sugar-free. Ridiculously good. 🍦🍯

Layers of creamy caramel ice cream, gooey caramel, and a crisp chocolate shell… all without dairy or refined sugar. Yes, it is possible — and yes, you need to try them. 🙌

Perfect summer treat ☀️ → save the recipe below.

Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

No dairy. No refined sugar. Just pure summer joy in every bite. 💫
Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
