I’ve noticed, I haven’t made any new granola recipes this year so I thought why not mix some healthier store-bought granola into an apple pie cobbler recipe and see how it turns out.
The verdict: It’s freaking phenomenal. It reminds me of a crumble but with bigger chunks of deliciousness. It’s super crispy with tons of apple pie flavor and juicy sweet baked apples.

Here is how:
Preheat the oven to 350 F and lightly oil a small 5 inch baking dish with coconut oil.
For the topping combine gluten-free flour, maple syrup, coconut oil, cinnamon, nutmeg, and gluten-free Granola in a medium sized bowl. Feel free to use gluten-free oats instead of granola for a healthier version. Place mixture in the refrigerator for about 5-10 minutes while preparing the apples.
In a large mixing bowl combine sliced apples, maple syrup, spices, lemon juice and corn starch. Gently toss everything together until combined.
Transfer the apple slices into the baking dish. Evenly spread the mixture topping on top. Bake for about 40-45 minutes until golden brown.
Allow cobbler to cool for about 15 minutes before topping with dairy-free ice cream.

- 1 tsp corn starch
- 1/4 tsp cinnamon
- 2 tbsp maple syrup
- 1 tbsp lemon juice
Crumble Topping:
- 1/2 cup gluten-free flour
- 1/3 cup gluten-free Granola (sub with gluten-free oats)
- 2 tbsp maple syrup
- 2 tbsp coconut oil (melted)
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg
