Berry Crumble Bars

Buttery soft and wonderfully juicy Berry Crumble Bars. Infused with elderberry powder these bars are healthy, easy and delicious, the perfect dessert or afternoon treat.

Berry Crumble Bars that are deliciously healthy and super easy to prepare. It’s the perfect spring treat to enjoy with friends and family.

Berry Crumble Bars

How to prepare Berry Crumble Bars:

Line a 8×8 inch baking pan with parchment paper and preheat the oven to 350 degrees Fahrenheit.

In a small saucepan add frozen berries, maple syrup and elderberry powder. Simmer over low heat for about 20 minutes until the fruits have broken down. Whisk in agar powder and set aside.

To prepare the crust combine cassava flour, almond flour, monk fruit sweetener and baking soda.

In a separate bowl add eggs, butter, apple cider vinegar and vanilla extract. Whisk until combined. Add wet ingredients into dry ingredients and mix well.

Berry Crumble Bars

Press ¾ of the crust mixture into the lined baking pan evenly. Pour berry mixture on top and sprinkle leftover crust mixture over the top of the berry filling.

Bake in the oven for about 25-30 minutes.

Once baked, remove from the oven and let cool for about 20 minutes. Slice in squares and enjoy.

Store leftovers in an airtight container in the refrigerator for two days.

Ingredients

Berry Filling

  • 4 cups frozen berries
  • 2 tbsp maple syrup
  • 1 ½ tbsp organic elderberry powder (optional)
  • 1 ½ tsp agar powder

Crust

  • 1 ½ cup cassava flour
  • 1 ½ cup almond flour
  • ⅓ cup monk fruit sweetener
  • 2 eggs
  • ⅔ cup butter, melted
  • 1 ½ tsp apple cider vinegar
