These yummy pumpkin waffles are perfectly crisp on the outside, fluffy on the inside and packed with lots of warm fall spices and pumpkin flavor. Top them off with fresh yogurt, pecans and maple syrup and you’ve got the perfect fall brunch meal.
I am more of an overnight oats, chia pudding kinda girl but on weekends all bets are off. On weekends I try to make more elaborate breakfasts such as pancakes, French toast and waffles. For pumpkin season I am all about these super delicious chickpea flour pumpkin waffles.

How to prepare these delicious waffles:
In a large bowl combine oat flour, chickpea flour, baking powder, cinnamon, pumpkin spice and salt.
In a separate bowl add eggs, milk, melted coconut oil, pumpkin puree, and maple syrup.
Whisk until fully combined. Pour wet ingredients into the flour mixture and stir until combined. Let the batter sit for about 15 min while preheating your waffle iron.
Pour ½ cup of batter onto each heated waffle iron section and close the lid. Once the waffles are golden with brown crispy edges, transfer onto a cooling rack. Repeat with the remaining batter. Enjoy with yogurt, pecans, fresh fruit and maple syrup.

- 1 cup oat flour
- 1 ¼ cup Navitas Chickpea Flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- ¼ tsp salt
- 3 eggs
- ⅔ cup milk
- ½ cup coconut oil, melted and cooled
- ½ cup pumpkin puree
- 3 tbsp maple syrup
