If you’re a fan of cookie dough and sneaking superfoods into your treats, you’re going to fall hard for these Maca Cookie Dough Bars. They’re everything you want in a wholesome snack: rich, chewy, a little indulgent, and packed with nutrient-dense ingredients — all while being gluten-free, dairy-free, and refined sugar-free. Oh, and did I mention they’re no-bake?

This recipe is perfect for when you’re craving something sweet but want to keep things nourishing. Maca adds a subtle caramel-like flavor along with a boost of energy, hormone-balancing benefits, and adaptogenic goodness. Paired with creamy nut butter, almond flour, and a touch of maple syrup, it’s the ultimate feel-good treat.

Maca Cookie Dough Bars

Ingredients

½ cup cashew butter
½ cup maple syrup
½ tsp vanilla extract (optional)
2 cups almond flour
2 tbsp Navitas Organics Maca Powder
¼ tsp fine sea salt
⅓ cup dairy-free chocolate chips

Chocolate Topping
1 cup dairy-free chocolate chips
2 tbsp cashew butter
1 tbsp coconut oil

Maca Cookie Dough Bars

1. Line a 8×8 inch baking pan with parchment paper.
2. In a medium sized bowl add cashew butter, maple syrup and vanilla extract. Mix until fully combined.
3. Add in almond flour, maca powder and sea salt. Mix until combined. Fold in chocolate chips.
4. Evenly press dough into a baking pan. Place in the freezer for about 20 minutes.
5. Meanwhile, melt chocolate chocolate chips, cashew butter and coconut oil in a small saucepan over low heat. Stir until mixture is smooth.
6. Remove cookie dough base from the freezer and pour chocolate mixture on chilled cookie dough. Place back into the freezer for 5-10 minutes until chocolate topping has set.
7. Sprinkle with sea salt, slice and enjoy. Store leftovers in the refrigerator.

This spiced cranberry gin smash is tart, cozy, and easy to throw together with minimal prep. I added the recipe for anyone needing a little last-minute cocktail inspo! no overthinking required!!

Cranberry Sauce
1 cup cranberries
2 tbsp agave syrup
2 cinnamon sticks
¼ cup water
Ingredients:
2 tbsp spiced cranberry sauce
4 oz cranberry juice
4 oz Empress Elderflower Rose Gin
1 tsp Agave syrup
12 oz club soda or tonic

Prepare spiced cranberry sauce by adding cranberries, agave syrup, cinnamon sticks and water into a small pot. Bring mixture to a boil and immediately turn down to a simmer. Simmer for about 20 minutes until cranberries have broken down and sauce has thickened. Take out the cinnamon sticks and set sauce aside to cool. 
In a glass add 1 tbsp of cranberry sauce, agave syrup, 2 oz of gin and 2 oz of cranberry juice. Stir well with a spoon. 
Add ice, top off with club soda and garnish with fresh cranberries and rosemary.

Recipe: 
Hazelnut Milk
1 cup roasted hazelnuts
Water, filled to the minimum line of the Almond Cow

Truffles
160 ml freshly made hazelnut milk
1shot espresso (or strong brewed coffee)
½ cup finely ground hazelnuts
1 cup dairy-free chocolate chips
1 tbsp coconut oil

Coating
1 cup dairy-free chocolate chips
Chopped hazelnuts (optional)

Instructions
Make the hazelnut milk: Process hazelnuts and water in the Almond Cow. Measure 160 ml milk for the recipe; refrigerate the rest for later use.

Prepare filling: Heat hazelnut milk and espresso until hot (not boiling). Pour over chocolate chips and coconut oil; let sit 2-3minutes, then stir until smooth. Fold in ground hazelnuts. Chill until firm, up to 3 hours.

Shape & coat: Roll into truffles and freeze for 2 hours. Melt remaining chocolate, dip truffles, and garnish if desired. Let set before serving or storing. Enjoy!
