Ingredients
½ cup cashew butter
½ cup maple syrup
½ tsp vanilla extract (optional)
2 cups almond flour
2 tbsp Navitas Organics Maca Powder
¼ tsp fine sea salt
⅓ cup dairy-free chocolate chips
Chocolate Topping
1 cup dairy-free chocolate chips
2 tbsp cashew butter
1 tbsp coconut oil
1. Line a 8×8 inch baking pan with parchment paper.
2. In a medium sized bowl add cashew butter, maple syrup and vanilla extract. Mix until fully combined.
3. Add in almond flour, maca powder and sea salt. Mix until combined. Fold in chocolate chips.
4. Evenly press dough into a baking pan. Place in the freezer for about 20 minutes.
5. Meanwhile, melt chocolate chocolate chips, cashew butter and coconut oil in a small saucepan over low heat. Stir until mixture is smooth.
6. Remove cookie dough base from the freezer and pour chocolate mixture on chilled cookie dough. Place back into the freezer for 5-10 minutes until chocolate topping has set.
7. Sprinkle with sea salt, slice and enjoy. Store leftovers in the refrigerator.
