Apple Pie Creamsicles
These Apple Pie Creamsicles are a creamy, cinnamon-spiced frozen treat made with layers of sweet apple filling and a rich cashew-coconut base. Naturally sweetened and protein-packed, they taste just like apple pie in popsicle form—refreshing, nourishing, and perfectly indulgent.
Ingredients
- 1 apple, peeled, cored, and chopped
- ¾ teaspoon ground cinnamon, divided
- ¼ cup pure maple syrup
- 2–3 tablespoons water
- 1 tablespoon almond butter
- ¾ cup cashews, soaked and drained
- 1 can (13.5 oz) coconut cream or full-fat coconut milk
- 5-6 Medjool dates, pitted and softened*
- 1 ½ scoops WHEY Cinnamon Vanilla Protein Powder (optional)
Instructions
1. Prepare the apple mixture:
In a small saucepan, combine the chopped apple, ½ teaspoon of cinnamon, maple syrup, water, and almond butter. Simmer gently over low heat for 10–15 minutes, stirring occasionally, until the apples are softened. Remove from heat and allow to cool completely.
2. Make the cashew cream base:
In a high-speed blender or food processor, combine the soaked cashews, coconut cream, dates, protein powder, and remaining ¼ teaspoon cinnamon. Blend until smooth and creamy.
3. Assemble the popsicles:
Spoon a thin layer of the cashew mixture into the popsicle molds, followed by a layer of the apple mixture. Continue alternating layers until the molds are filled.
4. Freeze:
Insert sticks and freeze for at least 4–6 hours, or until fully set.
5. Serve:
Gently remove the popsicles from the molds and enjoy. Store any leftovers in the freezer.
Notes
*Place the pitted dates in a small bowl. Pour over enough hot (almost boiling) water to cover them. Let soak for about 5–10 minutes, then drain. Pat dry before using if your recipe is sensitive to extra moisture.
