Transitioning back into fall homeschool lessons and activities with the boys always requires extra prep. Having a stash of wholesome, ready-to-go treats in the freezer is an absolute lifesaver. These Chocolate-Dipped Banana Date Popsicles have quickly become an afternoon staple. They’re incredibly creamy, perfectly sweet, and entirely refined sugar-free. Simply put, they’re exactly the kind of nourishing snack we need after a busy day.
If you love the rich, caramel flavor of Medjool dates, this recipe is going to be your new favorite. Blend softened dates with ripe banana, cashew milk, and a generous scoop of unsweetened Greek yogurt. The base takes on a luscious, ice cream-like texture that resists getting icy when frozen. Tips for the Perfect Popsicle Base
The secret to that ultra-smooth texture is making sure your Medjool dates are properly softened before blending. If they’re a bit firm, soak them in hot water for ten minutes, drain them, and they’ll blend seamlessly. This base is also incredibly forgiving if you want to sneak in a bit of extra nutrition. I often add sunflower seed butter or unflavored collagen protein powder into the blender. The boys never even notice the difference!

Mastering the Chocolate Shell
The real magic happens with the crunchy chocolate coating. Once the popsicles freeze solid, dunk them in a glossy, homemade shell. I always melt high-quality dairy-free chocolate, such as Hu Kitchen gems or Raaka chocolate, over a double boiler. Pouring the melted chocolate into a tall glass makes dipping effortless and gives you a beautifully even coating.
You have to work quickly before the chocolate hardens, immediately sprinkling your toppings over the wet shell. Crushed pecans or hazelnuts add a wonderful roasted crunch. If you have cookies in the pantry, crumbling those over the wet chocolate works great too.

Greek Yogurt Banana Popsicles
These creamy banana popsicles are naturally sweetened with caramel-like Medjool dates and finished with a crisp, refined sugar-free chocolate shell. Blended with cashew milk and a thick yogurt base for a rich, ice cream-like texture, they are a simple, wholesome treat that takes just 15 minutes of hands-on prep.
Ingredients
Popsicle Base
- 1 ripe banana
- 1 cup unsweetened Greek yogurt (or a thick dairy-free alternative like coconut yogurt)
- 2/3 cup cashew milk
- 4-5 Medjool dates, pitted and softened
- ½ tsp vanilla (ground or extract)
Coating & Garnish
- 1 cup dairy-free, refined sugar-free chocolate chips (such as Hu Kitchen gems)
- ¼ cup crushed nuts (such as pecans or walnuts)
Instructions
1. Blend the Base
In a high-speed blender, combine the banana, yogurt, cashew milk, softened Medjool dates, and vanilla extract. Blend on high until the mixture is completely smooth and creamy.
2. Freeze the Popsicles
Requires 4-6 hours
Pour the blended mixture evenly into your popsicle molds. Insert the sticks and place them in the freezer until completely solid.
3. Melt the Chocolate
Once the popsicles are fully frozen, set up a double boiler by placing a heat-proof bowl over a pot of simmering water. Add the dairy-free chocolate chips and stir continuously until smooth and fluid. Transfer the melted chocolate into a tall, narrow glass to make dipping easier.
4. Dip and Garnish

Remove the popsicles from their molds. Dip each frozen popsicle into the warm chocolate, letting any excess drip off. Immediately sprinkle the crushed nuts over the chocolate shell before it hardens.
5. Set and Store
Place the coated popsicles on a parchment-lined tray and return them to the freezer for a few minutes to fully set the shell. Store in an airtight container in the freezer.
