Ingredients:
2 onions (peeled and halved)
4 cloves of garlic
1 tsp grated fresh ginger
11/2 tbsp cumin powder
1 tbsp paprika powder
1/2 tsp cayenne powder
1 tsp turmeric powder
1/2 tbsp garam masala
1/2 tsp chilli flakes
1 1/2 cans of coconut milk
1 cup of water
1 handful fresh cilantro (or parsley)
Salt, Pepper
Avocado oil
Glutenfree Rice Noodles
Sesame Seeds for garnish
Method:
In a large pot saute onions, garlic and ginger in some avocado oil over medium-high heat until slightly brown for about 5 minutes. Add all the spices, stir and sautée for another minute or so. Deglaze with water and cook for 5 minutes. Add the coconut milk and fresh herbs and cook for about an hour on low heat.
In the meantime prepare a pot of water for the noodles. 10-20 minutes before the soup is done, cook your noodles. Add salt and pepper for taste and enjoy while the soup is still hot.
