I can’t tell you enough how much I enjoy drinking homemade cold brew coffee. It has been one of my favorite refreshments this summer and thankfully it is incredibly easy to make. I used to buy my cold brew fix at the store until I realized I could just make it at home instead. It is so much cheaper, I get a lot more out of it and most importantly I can control the taste and concentration. When about 20 bucks worth of beans makes almost 3 gallons of cold brew, the decision practically makes itself!

How to make Cold Brew Coffee

Here is how it works: Buy your favorite coffee beans, grind them at home or wherever you buy them. If you don’t really know what coffee you like, I suggest you start off with a mild flavor. In a large jug/jar combine about 5 oz of coffee with 20 cups of filtered water and let it steep preferably over night for about 12-15 hours.

In those 12-15 hours the coffee slowly infuses the water, creating a concentrated brew. The longer the coffee steeps, the stronger your brew will be. Strain through a nut milk bag, cheese cloth or fine sieve and transfer it back into an airtight container.

A tip: If you don’t want to deal with the hassle of straining, fill up a nut milk bag with ground coffee and seal it before adding it into the water. Why choose cold brew over regular coffee

With slowly infusing the water, you are pulling all the great flavor from the coffee beans without it tasting overly bitter or sour. It almost has a sweeter taste to it and definitely will be a palate pleaser for those who  who usually prefer their coffee less bitter.

You can always adjust the concentration of your cold brew by adding more or less water depending on your taste preference. Try to add a few cups less water for a more concentrated brew, add some plant-based milk and you got yourself a delicious Cold Brew Latte. I have to admit I only enjoy my homemade cold brew coffee with oat milk. Starts my day just right.

If you make a bigger batch it will last you for a while and you won’t need to worry about making coffee in the morning. You can always heat up your brew if you prefer your coffee hot. On hot summer days though I suggest to drink the cold brew over ice. It’s just like iced coffee but tastes a million times better. Another crazy idea: Enjoy it in form of a popsicle! 😛

Ingredients

  • 5 oz ground coffee
  • 20 cups filtered water
  • 1/2 cup cashew or oat milk* (optional)

Instructions

  1. In a large mason jar add the ground coffee and filtered water. Stir to combine and seal with a lid.
  2. Refrigerate for about 12 to 15 hours.
  3. When the cold brew is ready to strain, put a cheesecloth, nutmilk bag or fine mash sieve over a large bowl/measuring cup. Strain the coldbrew.
  4. Store in the refrigerator up to two weeks. To serve, pour coffee over a glass filled with ice. Add plant-based milk to make a cold brew coffee latte.

Notes

*To make a cold brew coffee latte add 1/2 cup to your coffee. 3:1 ratio.

Save this recipe
1 cup cashews, soaked
1 cup dairy-free milk, unsweetened 
5 medjool dates, softened with boiled water
1 Bourbon Vanilla bean or 1 tsp vanilla extract 
5-6 frozen strawberries 
1 1/2 cup chocolate chips, I used @hukitchen 

In a blender or food processor add all ingredients . Process until smooth! Transfer into ice cream bar mold. Freeze for about 2-3 hours. Melt chocolate: Coat bars in chocolate mixture and sprinkle with freeze dried strawberries Put back in freezer for 5 min. Enjoy! Layers of creamy caramel ice cream, gooey caramel, and a crisp chocolate shell… all without dairy or refined sugar. Yes, it is possible — and yes, you need to try them. 🙌

Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
