BOO! What’s halloween without a little spooky ghost action? I decided to come up with some fun thematic ideas this year, so here I give you the cutest little ghost meringues you’ve ever seen. So easy to make and a crowd pleaser at any halloween party.
The fun thing about meringues is that you can create some pretty sweet snacks without having to do much work. All you need is a piping bag and piping tips. For these spooky ghost meringues I specifically used a round tip to create that ghostly shape. With a tooth pick I engraved those eyes before drying them in the oven. Trust me, it sounds like more work than it actually is.
How to create the perfect meringue mixture:
- whether you use egg whites or aquafaba you need to whip the mixture long enough for it to be stiff and keep its shape when drying in the oven. With a kitchen aid it will take you about 5-10 minute to get the consistency right. I have never used a hand mixer for meringues so I can’t tell you how long that would take.
- do not add your sweetener all at once. For the meringue to be perfect you need to add your sweetener gradually until it becomes glossy and firm.
- When using granulated sugar, try to buy fine crystals that are easier to incorporate. You want all of the crystals to dissolve before piping the meringue mixture onto your baking sheet.
- dry the meringues at a 200 degrees Fahrenheit in the oven for about two to three hours. If you bake them at a higher temperature you won’t be able to create a classic meringue.

Ghost meringues
BOO! What's halloween without a little spooky ghost action? I decided to come up with these super cute and fun ghost meringues. So easy to make and a crowd pleaser at any halloween party.
Ingredients
- 2 egg whites
- 1/4 cup granulated monk fruit sweetener (powdered sugar or fine granulated sugar)
- 1/4 tsp cream of tartar
Instructions
- Preheat oven to 200 degrees Fahrenheit and prepare a baking sheet with parchment paper.
- In a clean medium sized bowl add egg whites and mix with a handmixer or in the kitchen aid until egg whites appear to be foamy. Add a little bit of monkfruit sweetener or sugar every few minutes and continue to mix until mixture appears to be glossy. Add cream of tartar and keep mixing until egg whites are stiff and glossy.
- Transfer meringue mixture into a piping bag with a round piping tip. Pipe out little ghosts and create eyes with a tooth pick or simply apply two black sesame seeds to each ghost with clean tweezers.
- Dry in the oven for about two hours. Let cool on the baking sheet before transferring into an airtight container.
Notes
Make sure all your sugar crystals are dissolved completely.
