Paleo Mocha Waffles

These healthy paleo mocha waffles are the perfect pick me up in the morning. “Pick me Up?” you might be wondering, yes! let me explain. They are not only perfectly moist, fluffy, and decadent but also packed with a little extra punch in the form of live pure’s pure cafe mocha supplement. Chocolate and coffee always was a match made in heaven, and waffles are no exception.

Paleo waffles seem to be catching on lately.  I see them more and more at some of my favorite healthy cafes and restaurants, and it makes sense. It’s so easy to make waffles healthy and they still taste totally amazing.
After I made these and shot them my husband completely tore them apart. He absolutely loves pancakes and waffles for breakfast, and he was standing by waiting anxiously for this particular shoot to finish. I’ll be honest, waffles were never really my cup of tea, but making these might have me changing my tune 😛 It seems like fluffy paleo mocha waffles, topped off with coconut whipping cream and fresh blueberries is hard to pass up, especially when they pack that extra caffeinated kick.

Guilty confession, I love a glass of cold brew coffee in the morning.  The extra little perk I get from a bit of caffeine gets me off to a good start whether I’m heading to the gym or setting up for a shoot. I thought, for this recipe it be a good idea to add some Pure Cafe Supplement into the mix . These boosted mocha paleo pancakes make for an amazing morning coffee flavor and will leave you satisfied without feeling like you just did something bad.

How to make the perfect paleo pancakes.

  1. First off you will need a waffle maker. For Christmas I got this Waffle Iron from my In-Laws and I am very happy with it! It’s easy to clean, has different temperature settings, and worked perfectly!
  2. This paleo recipe calls for 4 eggs so make sure to have enough at home before you attempt to make some yummy paleo mocha waffles.
  3. As a flour I used coconut and almond flour. I tried different measurements of both flours and the waffles turned out pretty much the same each time.
  4. If you want to cut back on sugar, this recipe is perfect for you as it only requires 1-2 tbsp of maple syrup. If you are more of a sweet tooth you can always sweeten it with some extra toppings such as berries, coconut cream, maple syrup or even melted chocolate. My personal favorite 🙂

Paleo Mocha Waffles

Cook Time: 5 minutes
Total Time: 10 minutes

These healthy paleo mocha waffles are the perfect pick me up in the morning. They are not only perfectly moist, fluffy, and decadent but also packed with a little extra punch in the form of live pure's pure cafe mocha supplement.

Ingredients

  • 1/4 cup almond flour
  • 1/2 cup coconut flour
  • 1/3 cup tapioca flour
  • 1/3 cup raw cacao powder
  • 2x pure cafe packets
  • 4 eggs
  • 1/4 cup plant-based milk
  • 2-3 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda
  • pinch of salt

Topping

  • 1/2 cup coconut whipping cream
  • 1/2 cup fresh blueberries
  • 1/4 cup maple syrup

Instructions

  1. Preheat your waffle iron
  2. In a medium sized bowl add all dry ingredients and combine.
  3. In a separate bowl add eggs and whisk well until lightly beaten. Add the rest of the wet ingredients and combine.
  4. Pour wet ingredients into dry and mix with a spatula or spoon until well combined.
  5. Scoop about 1-2 cups of batter (depending on the size of your waffle iron*) into the center of your waffle maker and close the top. Cook per instructions.
  6. Serve immediately and top off with coconut cream, maple syrup and fresh blueberries.

Notes

* I used a 4 way square waffle iron and poured about 2/3 of my batter into my waffle maker.

Save this recipe
1 cup cashews, soaked
1 cup dairy-free milk, unsweetened 
5 medjool dates, softened with boiled water
1 Bourbon Vanilla bean or 1 tsp vanilla extract 
5-6 frozen strawberries 
1 1/2 cup chocolate chips, I used @hukitchen 

In a blender or food processor add all ingredients . Process until smooth! Transfer into ice cream bar mold. Freeze for about 2-3 hours. Melt chocolate: Coat bars in chocolate mixture and sprinkle with freeze dried strawberries Put back in freezer for 5 min. Enjoy! Recipe 12 mini ice cream bars
Caramel:
1 cup coconut cream
2/3 cups coconut sugar

Bars:
1/2 cup cashews, soaked in boiling water for 30 min
3-4 medjool dates, pitted
1 cup dairy-free milk, i used coconut milk
1/4 tsp salt

1 cup chocolate chips, I used @hukitchen 

 For the vegan caramel, combine coconut sugar and coconut cream in a small saucepan and bring to a simmer. Reduce heat and keep simmering over low heat for about 30-40 minutes stirring every few minutes until it thickened.
Let the caramel sauce cool and add salt. Set aside and it will thicken even more while cooling.

Add 1 -2 tbsp of caramel into your preferred ice cream molds and freeze for about 2-3 hours.

In a food processor add cashews, coconut milk, dates, salt and 1/4 cup of caramel. Process until completely smooth. Top molds with ice cream mixture and add wooden sticks. Freeze for about 4-5 hours. Coat in melted chocolate and sprinkle with salt. Enjoy and store in the freezer.

Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
