This recipe follows the same concept as a regular cookie, but the taste and texture are like a brownie…actually, let me rewind, it’s not exactly the same concept, because these deliciously rich brownie cookies are made of wholesome and clean ingredients. No butter, no wheat flour, no cane sugar.
You probably think to yourself, why brownie cookies, when I can just make some delicious brownies? I can’t argue with that, but I think these look absolutely fantastic and they’re really easy to make. In fact, you’ll only need one bowl and a few ingredients to whip these delightful cookie brownies up. They take 10-12 minutes in the oven, so they’ll be perfect when you need something to impress but are a little short on time.

Paleo Brownie Cookies

Ingredients
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup coconut sugar
- 1/4 cup almond butter (creamy)*
- 1/4 cup tahini (creamy)**
- 3 oz unsweetened/stevia sweetened chocolate (melted)
- 1 egg
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/3 cup chocolate chips (paleo/stevia sweetened)
- 1/4 tsp salt
- optional: 1 scoop of collagen powder
Instructions
- Preheat oven to 375F and line a baking sheet with parchment paper.
- In a medium sized bowl add coconut sugar, almond butter, tahini, egg and melted chocolate. Stir with a spatula until combined.
- Add baking soda, almond flour, coconut flour, cocoa powder, collagen (optional) and salt. Stir until completely smooth.
- Fold in chocolate chips. Form batter into 8-10 cook dough balls and place on baking sheet. Press down slightly and bake in the oven for about 12 minutes.
- Let cool for a couple minutes before serving.
Notes
*For this cookie batter to work, the almond butter and tahini should be creamy and smooth.
**You can sub the 1/4 cup of tahini with almond butter as well as sub the almond butter with tahini.
