Who else is obsessed with the combination of chocolate and coconut? Coconut is one of my favorite flavors and you know how much I love chocolate. You can only imagine how excited I am to share this recipe. It has to be hands down one of the best no-bake coconut bars I have ever made.

I’ve tried out a similar recipe before, but this time I decided to add a raw cocoa hazelnut base and topoff with a deliciously creamy chocolate ganache. One bite and you’ll find yourself in heaven, seriously!! Simply decadent!

As always,  these mouthwatering paleo coconut bars are gluten-free, refined-sugar free, and plant-based. Because of the high coconut and cacao content they are also packed with Omega 3. This is the perfect healthy fat bomb recipe if you ask me.

Tips to make the perfect No-Bake Chocolate Coconut Bars

  • When using coconut milk/cream, make sure to refrigerate the coconut milk/cream overnight and use the solid part only.  By doing this, you’ll ensure a thick and creamy consistency. If  add all of the liquid as well, the bars won’t hold in the refrigerator.
  • Use plastic foil to prepare the bars.
  • To make sure these bars stay on the healthier side, I’d recommend using paleo/stevia sweetened chocolate for the ganache.

No-bake Chocolate Coconut Bars

Satisfy your sweet tooth with these delicious and wholesome no-bake paleo chocolate coconut bars. Three layers combined into one of the best healthy treats you'll ever taste. The creamy coconut layer and delicious chocolate mousse ganache will melt in your mouth.

Ingredients

Base

  • 1 cup hazelnuts (roasted), sub with almonds or nuts of your choosing
  • 4 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/4 cup cacao powder
  • 2 1/2 tbsp coconut oil

Coconut Layer

  • 1 1/2 cans full-fat coconut cream/milk (solid part)* unsweetened
  • 3 tbsp coconut oil
  • 5 tbsp coconut butter
  • 1 1/4 cup shredded unsweetened coconut 
  • 1/4 cup maple syrup

Chocolate Mousse Topping

  • 1/2 can full-fat coconut milk (unsweetened)
  • 7 oz paleo/stevia sweetened chocolate chips 
  • 1 tbsp maple syrup

Instructions

  1. Line an 8 inch square brownie pan with plastic foil.
  2. In a food processor add hazelnuts, coconut flour, cacao and process until nuts are finely chopped. Add maple syrup and coconut oil and process into a thick mixture. Press into the base of the brownie pan and place in freezer for about 10 minutes.
  3. To prepare the coconut layer add solid part of coconut cream/milk, coconut oil, coconut butter and maple syrup in a small saucepan and combine over low-medium heat. Fold in shreddeed coconut and mix well.
  4. Pour coconut mixture into the brownie pan and freeze for another 1-2 hours until set.
  5. In the meantime prepare chocolate topping. In a small saucepan add coconut milk and heat over low-medium heat. Add chocolate chips and stir until chocolate has fully melted and incorporated.
  6. Pour on top of coconut layer and transfer back into the freezer for another 20-30 minutes until fully set.
  7. Cut into squares and enjoy. Store leftovers in the refrigerator in an airtight container for up to one week.

Notes

* refrigerate coconut milk overnight. Use solid part only.

Recipe down below! 
1 1/3 cups raw cashews (soaked)
1 can full-fat coconut cream
2-3 softened pitted medjool dates
1/2 tbsp vanilla extract
1/3 cup berry chia jam or store bought jam! 
1 1/3 cup hukitchen chocolate gems
Optional: 1/3 cup puffed quinoa

To prepare the ice cream base soak cashews overnight or for 4 hours minimum. Rinse cashews and place in a food processor.
Add coconut cream, vanilla extract and medjool dates and process until completely smooth.
Transfer 1 tbsp of berry jam into each ice cream mold. Fill up with the vanilla cashew base and freeze for a minimum of 4 hours.
To prepare the chocolate coating melt chocolate over low heat. Once the chocolate has melted, add in the quinoa and combine. Take ice cream pops out of the freezer and coat them with chocolate by using a spoon. Let sit on a baking sheet until chocolate has fully hardened.
