Personally I am a huge fan of homemade oatmeal. Eating it warm has a grounding/comforting effect on me. In general, nutritious meals made with quality ingredients make me feel like that, and oatmeal has always been a go to for me. The great thing about this recipe is that it’s a lot less involved than preparing oatmeal on the stovetop which is what most people do. Just mix a few wholesome ingredients and let the oven do the rest š It might take a bit longer than usually but it’s definitely worth it.
You’ll end up with a deliciously healthy filling breakfast that you’re going to love. The oven will give the outside a crispy texture that’s totally awesome.
how to make the perfect vegan baked oatmeal
- use any kind of plant-based milk. I used almond milk but any other vegan milk will do the job. Oat milk would be another solid choice, or you could use hazelnut milk, which will impart a really awesome hazelnuts flavor. Get creative!
- Normally baked oatmeal is made with eggs, but I would recommend using chia or flax seeds instead. These are amazing binding agents for vegan dishes.

Vegan Baked Oatmeal

Ingredients
- 3 cups gluten-free rolled oats
- 3 cups Elmhurst Milked Almonds
- 1 cup frozen or fresh berries
- ā cup maple syrup
- 2 tbsp coconut oil (melted)
- ½ cup almonds
- ¼ cup chia seeds
- 1 tsp cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract (optional)
Instructions
1. Preheat the oven to 350 degrees Fahrenheit.
2. Mix all dry ingredients in a bowl and set aside.
In a separate bowl mix all wet ingredients.
3. Mix all dry ingredients into wet ingredients, mix well until combined and set aside for about 5-10 minutes.
4. Pour the oatmeal mixture into an 8 inch baking dish or 3-4 smaller coquette dishes.
5. Sprinkle some additional chopped almonds and blueberries on top and bake in the oven for about 40-45 minutes.
6. Serve while still warm with a fresh glass of milk.
