I am so excited to introduce you to my personal delight.fuel health blog. I have been working on it for a while and I am so happy to finally be able to share healthy delightful recipes with you that might change your life.
You wonder why I started this food journey?
Four years ago, I was diagnosed with an autoimmune disease called Hashimoto’s. Hashimoto's disease is a condition in which your immune system attacks your thyroid. The thyroid controls most of the basic functions in our bodies. If the thyroid doesn't work properly, your body won't work as it should. There is no final list of symptoms that can describe Hashimoto's but personally I've experienced symptoms such as facial neuralgia, fatigue, irritability, anxiety, and RLS (Restless leg syndrome).
It took more than half a year, several doctors and several misdiagnoses (Lyme disease, non-hodgkins lymphoma, depression, etc.) to find out what the actual cause of all these symptoms was. Back then I was relieved to finally have closure and start my hormonal treatment. I started to feel better right away and it seemed to be an easy success story.
It was only after 2 years, when I started to have serious gut issues that I realized that Hashimoto's was not such a piece of cake after all. Even with medication the thyroid attacks will never stop. My holistic health practitioner back then described hashimotos as a volcano that errupts every now and then, meaning I'll be experiencing new health problems from time to time unless I take control of my situation. I found out that in order to even dream of making your condition better, one needed not only to change their life style but also completely change eating habits. Thats when I decided to take matters into my own hands and do everything possible to heal myself.
I started researching and reading a lot about my disease and found that gluten, dairy, and sugar are the first things to eliminate when you have Hashimoto's. I started cooking with only fresh and whole ingredients. I leave out any processed food filled with refined sugars and preservatives that will certainly not help restore balance to my gut and my immune system.
I read that healing the gut lining is imperative in order to reach remission from Hashimoto’s or any autoimmune disease. This means plenty of vegetables, high quality protein, high quality omega-3 anti-inflammatory fats, and low-glycemic fruits.
In my cooking I use:
- Fresh vegetables like carrots, broccoli, sweet potatoes, beets, celery, kale, spinach, cauliflower etc.
- Wild caught fish like salmon, sardines and shellfish.
- Pasture raised meats like grass-fed beef and pastured chicken.
- Healthy fats like coconut, avocado, pastured animal fats, olive oil, seeds and nuts
- Here and there I use gluten free grains such as quinoa, brown rice, oats etc.
I have always had a passion for food and cooking growing up because my mum, who is an amazing cook, taught me how to create delicious food. Being diagnosed with Hashimoto's has opened my eyes to a completely different but exciting world of clean cooking. I get to create not only healthy, but also delicious foods which help me on my journey to heal my body. The changes that I have adapted have improved my life immensely but diet is definitely not the only thing you need to think of when healing your body from a disease like this. With this blog I intend to help others on their own personal health journey by sharing personal experiences, tips and most importantly delightful recipes.
The main goal of delight.fuel is to share recipe creations that inspire others to eat healthy, feel good about what they are eating, and most importantly nourish their bodies with delicious, natural food.

You’ll need:
200 ml unsweetened almond milk (or any plantbased milk)
1 1/2 tsp beetroot powder
1 tsp vanilla extract
Froth your almond milk in a milk frother or heat in a pan on low heat, frothing with a hand frother or whisk.
In a cup mix beetroot powder with 1 tbsp of water to turn it into a smooth paste. Add vanilla and pour over the warm milk.
Finish off with some beetroot powder.
