I’ll be honest, until a few weeks ago I didn’t know what a snickerdoodle cookie was (don’t judge). In Austria we don’t have them!
Hence I was excited to bake my first batch of snickerdoodle cookies last week. They came out perfect (will be on the blog soon), which gave me an idea. Cinnamon is one of my favorite spices and I love topping off my coffees, baked goods, etc with it. Why not mix some of that goodness into a delicious breakfast smoothie?
I whipped up this dairy-free snickerdoodle smoothie in no time and knew right away it had to go on the blog. It is incredibly silky and oh dang, so freaking tasty.
The cashews add a unique neutral and rich flavor to the smoothie that will make you want more. Just one more delicious dairy-free recipe that proves that there is absolutely no need for dairy in your diet!

What you need to prepare the perfect Snickerdoodle Smoothie:
Non-dairy milk: I used a combination of coconut and cashew milk. If you are not a fan of coconut milk you can either add more cashew milk or sub with any other plant-based milk.
Medjool Dates: Dates are the perfect natural sweetener. It is definitely underestimated how sweet medjool dates can be. I like to add 4-6 medjool dates but based on your preference you can add more or less. To achieve a smoother product, make sure to soften them with hot water before adding to the blender, and definitely make sure none of those rock hard pits. make their way into the final product!
Cinnamon & Nutmeg: I used a combination of cinnamon and nutmeg in my smoothie. I am a huge fan of nutmeg and love to add it into almost anything that requires cinnamon and winter spices. Feel free to leave that out if you prefer cinnamon only.
Cashews: Cashews are the perfect flavor carrier in dairy-free desserts/meals. They add a ton of health benefits and a silky texture without much additional flavor. They are perfect for any type of smoothie.
Toppings: I love to add whipped cream and tahini caramel on top. It’s makes a delicious dessert. If you prefer healthier, feel free to leave the toppings out.

Dairy-free Snickerdoodle Smoothie

Ingredients
- 1 1/2 cups cashews (soaked*)
- 1 can coconut milk (full-fat)
- 1 1/2 cups cashew milk (sub with plant-based mil)
- 6 medjool dates pitted, softened** (sub with 1/4 cup date syrup)
- 1 tsp nutmeg
- 1 tbsp cinnamon
- 1/4 cup collagen (optional)
- tahini caramel (optional)
Instructions
- In a high speed blender or large food processor add all ingredients and blend until completely smooth for about 5-10 minutes.
- Serve immediately and add tahini caramel (optional) for a sweeter taste.
- Transfer leftovers into a jug and refrigerate for up to three days.
Notes
*Pour boiling water over cashews in a bowl and let sit for about 2 hours. Drain before using.
**Soften dates with boiling water for about 10-15 minutes.
